Aha, I thought it was a meat of some type with fat for just the reason you mention! Oh, that skin, be still my heart! And the sea shell dip serving dish... I want to think you made this yourself, because you are such a clever person and I've seen other unique creations you've made. Gorgeous, and how utterly perfect for salmon skin! Some time back I grilled salmon with skin on and it accidentally came out crispy (not nearly as nice as yours though) - DH wouldn't touch it so I ate every last bite of both his and mine : ) Heaven! Had I dip for it, he'd have 'taken the bait', I'm sure : ) But he'd had to have fought me for it! Some day I need to save the skin and try oven roasting it separately. Even if (or especially if) I'm the only one who eats it : ) Cathy, someday you should try well-made crispy fish skin : ) I know it's not to some tastes, but gosh, I love it!
