Countertop edge help

I have shaker cabinets in my kitchen and was planning to go with the pencil edge (which I believe is the same as the eased edge), but read here that it can be more prone to chipping. My other choices for edges that don't have an upcharge are 3/8 radius, 1/4 radius, 1/2 bevel, and 1/4 bevel. So now thinking of going with the 1/4 bevel.

I have shaker cabinets in my bathrooms too. Can I just use the same 1/4 bevel on those countertops.

And then stick with the same edge for my fireplace granite. (my fireplace is contemporary style).

This is a custom build home and I'm getting very overwhelmed with all the choices, so thanks in advance for your help!
