Why are my scrambled eggs always blah?
Comments (44)Low and slow for scrambled eggs here. No addition of water, milk, cream or whatnot. Though some of the suggestions sound good to me. I worked at a breakfast place many years ago and they used just eggs for scrambled and omelets. They whipped them up in those old fashioned malt/shake maker things. I do the same with a wisk for a for a few eggs or use the blender for a dozen or more. I like them a little wet but for those that don't I take them of the heat while still wet and finish them in the pan. I think it's a timing thing but my nephews love them and give their DM a hard time about her eggs all the time....family thing. Farm fresh eggs are great and I miss them after moving back to the city from the lake. The lady I bought them from left them on a table in front of the house with a coffee can to put your money in and you were suppose to leave an empty egg carton or two for your next purchase. Comments (4)Little Cherry Pie's These are like individual cherry pies. SO good too! 3/4 cup flour 1/2 cup packed brown sugar 1 teaspoon ground cinnamon 1/2 cup Butter 1/2 cup Chopped Nuts, if desired 1 can (16.3 oz) Pillsbury Grands Flaky Layers refrigerated biscuits 1 can (21 oz) apple, blueberry or cherry pie filling 1 to 1 1/2 cups whipping cream Cinnamon-sugar 1. Heat oven to 350F. In medium bowl, mix flour, brown sugar and cinnamon. With pastry blender or fork, cut in butter until mixture looks like coarse crumbs. Stir in nuts. 2. Separate dough into 8 biscuits. Split each biscuit in half to make 16 rounds. With floured fingers, flatten each to form 4-inch round. Press each biscuit round in ungreased 2 3/4x1 1/4-inch muffin cup. Spoon 2 tablespoons pie filling into each biscuit-lined cup. Sprinkle each with about 2 tablespoons flour mixture. (Cups will be full.) 3. Bake 15 to 22 minutes or until golden brown. Cool 5 minutes. Remove from muffin cups; place on cooling rack. Cool 10 minutes. 4. Comments (37)Johnliu, matzoh balls do freeze o.k., though like most things, they're better fresh. I do find they are one of those items that having a vacuum seal system of some sort makes a real difference. I generally have a zip lock bag of my chicken soup in the freezer all made up...I think there is less risk of freezer burn when the meat and veggies are frozen IN the stock. I can tremble and dizzy my way through putting a frozen lump of soup in a pan on low...but if I'm capable of making it from scratch, I'm likely capable of eating whatever might be available in the fridge or even going out to pick up a good batch of Caldo De Pollo from my local Taqueria! Comments (24)Sounds interesting ... if I were going out to work ... but I've been on gov't. pension for 25 years, and most days am not in a great rush when I start moving in the morning. When one changes a frozen thing to appropriate to eat ... they call that "thawing", don't they? When one "un-thaws" ... is that, like, re-freezing? My ex-, who died something like 15 years ago, after we'd been apart for more than 30 years, used the "unthaw" term quite a lot ... (and she'd had 4 years of univ.; granted, learning how to run a food service system in a hospital). But, come to think of it, I imagine they'd be "un-thawing" things on occasion, there.
