Can one use pork oil (or grease) after baking?

The other day I bought something called Smithfield Boneless Netted Pork Shoulder Roast (http://www.smithfield.com/products/fresh-pork/boneless-pork-shoulder-roast/).


Yesterday I used this delicious Indian recipe to bake it:

I had never baked such a big piece of pork before.

What I immediately noticed, when I was done cooking, is that there was
oil (or grease) that was like one or two inches high at the bottom of
the deep cast iron pan that I always use for baking (it's good for
preventing splatter). When I poured it into a container, it looked just
like olive oil.


My stupid question: is this oil or grease good to use in cooking other
things? I just had to ask since I hate throwing away things, if they can
be used? I kid you not. There was a lot of oil/grease in the pan.

I'll appreciate any feedback.
