Last minute Cinco de Mayo Table
Comments (7)I love your table, Frou! So colorful and bright, it was a great idea to use your keepsake blanket. I have those DT dishes and glasses too, they are so versatile. I used them with the yellow tea towels. They look wondeful with the blue ones. The large candle sticks and candles are just the right touch. Your new pitcher is really pretty and the orange and yellow flowers are perfect in it. I love the little planter and salsa and chip plate. The feather art is very pretty. This is a perfect Cinco de Mayo Table. You put a lot of thought into it even if it was "last minute' TFS NanaK...See MoreCinco de Mayo dessert
Comments (20)Here you go: (Of course I forgot it was cinnamon and espresso not chocolate and espresso but....) Mexican Sugar Cookies 3/4 cup Butter 3/4 cup white sugar 1 egg 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1/2 cup cornmeal Espresso powder Cinnamon Directions Cream together the butter and sugar. Add the egg and vanilla. Sift together the flour, baking powder and cornmeal. (I sifted only the baking powder, salt and flour then mixed in the cornmeal. This gave the cookies a coarser texture.) Add flour/cornmeal mixture to egg mixture incorporating a little at a time. Drop by spoonful (I rolled them in to balls then flatten them slightly) onto parchment paper lined cookie sheet. Bake at 350 degrees F until edges just turning slightly brown about 12-14 minutes. Do not overbake. While cookies are baking mix together cinnamon and espresso powder and process in blender until itÂs a fine powder. Immediately after removing the cookies from oven, sprinkle with espresso powder and cinnamon mixture. Cool on wire racks. Makes 2 dozen...See MoreWhat's for dinner ~ Cinco de Mayo version?

Comments (9)I have made these, they are easy to hold and eat. Buy frozen Texas toast I get the one with cheese, spread a thin layer of refried beans on top (I prefer black beans) a spoon of good salsa spread next, thin slices of avocado, sprinkle a layer of Mexican blend grated cheese on top. Put in oven following the directions on the toast box, nice melted cheese will let you know it's ready. You can always cut one piece into 2....See More- 8 years ago
