Need help with breakfast station area

Redoing our kitchen, and need help with our breakfast station/snack area. It is an area under the stairs about 60 inches wide with a depth of 36 inches. Attached is the first draft but it needs work. Above counter cabs are 21 inches deep to accommodate microwave.

My concerns:

1. 42 inch counterheight-do you think it would be too high for kids to use? if we do this, I think a 36 inch high pull out cutting board might be helpful. Or....we may drop the counter down to 36 to make it more useable for prepping snacks.

2. will coffee maker (to be stored in an enclosed lift up door and which we program to turn on in the am) ruin the inside of painted white wood cabinets? I was envisioning this and the tea kettle on a roll out that would allow easy access.

Bottom also needs work....Need place to store: cereals, snacks, bread, lunchboxes, water bottles, lunchboxes, coffee and tea stuff. Thinking rollouts might be better than drawers.
