I'm making an Italian ricotta cheesecake today. Usually, I don't make a crust and then I drizzle honey on the top and then add a thin layer of toasted slivered almonds. But today I decided to try doing an almond crust, so it's in the oven. I also have some mango-pineapple jam that I put up last year and needs to be used, so I'm thinking of using it as a topping. I know some people are purists when it comes to cheesecake and say a good cheesecake needs to be naked, but I like it both ways. Has anyone ever used jam as a cheesecake topper?
