It is pretty easy to get a decent match on older wood - if you are willing to pay! There are numerous companies that specialize in reclaimed lumber. They would be able to match you up with some planks from the same time period and mill them to match yours. We just did that with heart pine in a 1912 house. It is not cheap though. Lumber, milling, installation/weaving, sanding and finishing came in over $25/sq ft. Fortunately it was just a few small patches. If you are just trying to make a new board look "old" - good luck. Modern lumber just isn't going to have the same look as the old growth trees they were logging 100 years ago. If you can swap out some boards from a closet for "free" that is a better option. As for the costs, ripping up 2 sections and repairing them obviously will cost more than just 1 section. For the urine damaged areas - whose idea was it to just sand? If you asked him to do it to save some money on repairs and now don't like the look, expect to pay to have it fixed. If you left it up to the contractor as to which boards to replace and which to salvage and he just did a poor job, then he should stand by his work and fix it.

You're right about it being hard to find pictures! But then it's hard to find pictures of non-white kitchens these days. There is a huge variety in the photos that I found. They cover everything from ultra modern to very rustic. Take a look and see what you like and what resonates with you. You're obviously drawn to wood (me too!) and I think you could have a beautiful kitchen with wood floors, cabs and counters. It's probably also something that would be pretty easy to make a mess out of. But you can say the exact same thing about a kitchen that is all white. You'll want to make sure your wood tones work together. I'd love to see pictures of samples you're thinking of using. Do what you love! Here are pics of my Karndean LVP in Savannah Oak in my yet to be finished suite reno. Herringbone pattern for the main bathroom and planks everywhere else. Trouble is I had to get metal nosings for the stairs in brushed nickel cause Karndean doesn’t make a matching nosing for this glue down product.

I agree with others that either the floors should be identical (which is going to be difficult to achieve and maintain) or quite different, but not sort of similar. I also agree with the comments of others that 360 degrees of wood is excessive. Admittedly, I don't know what a "chalet" means in this context or how it relates to the inspiration photos you've posted (and I've spent time in Aspen, Park City, and the Swiss Alps, where there are what I would think of as "chalets"). You have selected photos that to me would be more accurately described as Scandi-Modern-Farmhouse, which is a popular trend but not one that really has much connection to chalets. Unless you are working with a nationally-known designer and have a budget of $500k or more, pointing to those kitchens does not say very much about what you will be able to achieve in yours. Nor do any of those spaces look particularly good IMO. Nor do they reflect what you want to do in your kitchen, which is wrap all surfaces in wood (one has no upper cabinets for an extremely light effect you won't achieve with wood uppers, one has a white ceiling, while you want wood, and another is mostly painted green cabinetry with wood as an accent only).
