I buy mine from Penzey's

I buy mine from Atlantic Spice. $6.30 for a pound of Saigon cinnamon.

Good heavens!! A POUND of cinnamon?? What do you do with that much cinnamon? I buy a jar from Penzey's that is 1.7 oz....holds about half a cup...lasts me for easily 6 months. A pound is more than 8 times that amount! Are you the local cinnamon supplier?

Penzey's, or their sister company, The Spice House, for cinnamon for baked goods. I also purchase a therapeutic cinnamon mixture of Trehalose, Celyon Cinnamon and bio-available ionic multi-trace minerals in phytonutrient form, called T/C+, by the 2# container and use this liberally sprinkled on lots of things (grapefruit, oatmeal, cocoa, toast, pudding...) each day. Think of it as a powdered supplement - that tastes good. This cinnamon product is for blood glucose support.

Linda--I just love cinnamon. I like it sprinkled on top of grapefruit and in coffee so go thru quite a lot of it. (I do keep the extra sealed up and in the freezer.)

annie1992 - why is Penzey's Vietnamese cinnamon not "true" cinnamon? Please being me up to date. Thanks.

Well, according to Alton Brown, Penzey's and some others, Vietnamese cinnamon is actually bark from the cassia tree. Ceylon cinnamon is "true" cinnamon, from the bark of the "zeylanicum" which is the Latin name for Ceylon. The cassia is stronger, some say harsh. True Ceylon cinnamon is softer when grating and has a sweeter flavor. I can break a stick of Ceylon in half when using sticks, but I can't break a stick of cassia, it's harder. I like the stronger flavor of the Vietnamese stuff, heathen that I am.

thanks everyone, does anybody buy cinnamon sticks?? grainlady, do u buy that mixture from Penzey's, if not where do u buy it?? i thought Cinnamon Hill was interesting b/c they date their sticks as to when they were harvested. they are very expensive and wondering if they are worth it...

sprtphntc, I do buy cinnamon sticks, but not to grate for ground cinnamon, I use them whole in things like pickles or canning cinnamon pears and when making jam or spiced cider. I do like that wooden grater, though.

sprtphntc, I get my sticks of cinnamon at Penzey's too, and a lot cheaper than Cinnamon Hill, although not individually wrapped and no neat wooden grater. Penzey's has a store about 50 miles from my house, and so I go once every several months and stock up on whatever I need. I did go crazy once and buy a big jar at the Mediterranean store, and it took about forever for me to use that many cinnamon sticks!

I buy cinnamon both ground and stick form from Penzey's, and Vietnamese is my favorite too. I have the Ceylon and do use it too. I did buy Vietnamese powder from King Arthur when I was out and needed a few dollars to get free shipping. It is good quality too.

If you want to grate the sticks, I'd look into a Microplane grater (they have a small one for spices or you can use one of the larger ones that will work well or other things too) and save some money -- though that grater is cool. It also appears to be a good part of the cost - the packagng adds too, and you don't eat that.

sprtphntc - We've been taking T/C+ more than a year. Diabetes runs rampant in hubby's family and T/C+ is just part of the things we do/consume to try to prevent it. A friend with diabetes introduced us to this product.
