Comments (58)Hey PK! Glad to hear from you. I make a sweet and sour sauce very close to what PK makes. I use it for sweet and sour pork but it would be great on meatballs now that I see Pete's recipe. 1/2 cup salad oil 1 clove garlic 2 green peppers, quartered 1 1/2 to 2 lbs pork tenderloin, cubed 2 eggs 3 TBSP flour 1 tsp salt pinch pepper 1 cup chicken broth 1 can pineapple chunks, drained 1 TBSP corn starch 3 tsp soya sauce 1/2 cup sugar 1/2 cup white vinegar 1 TBSP molasses Parboil peppers for 5 minutes. Saute garlic in oil. In separate bowl, beat flour, eggs and seasonings. Dip the pork in the mixture and brown in the oil. Pour off excess oil add broth, pineapple and peppers. Cover and simmer 20 minutes. Blend remaining ingredients. Add to pork. Stir until thick. For meatballs forget the pork, flour and eggs. Dice rather than quarter the peppers so I would forget the parboil part. Continue from the broth part on. I've talked myself into trying this I think it would be yummy! Maybe it's too much but I'd go for a Sweet and Sour, a Marinara, a BBQ and a Swedish style, actually a Mexican sauce could be could too. That's it !! Have a meatball station! Comments (33)I forgot about this one until jsut now.... hope no one minds a late entry! Bacon Mushroom Swiss Meatloaf "This meatloaf is full of flavor, and a delicious twist on an old favorite. Bacon, onions, mushrooms, and Swiss cheese are added to ground beef and baked to perfection." INGREDIENTS: 12 ounces chopped raw bacon 1 large white onion, chopped 8 oz mushrooms, chopped 1 1/2 pounds extra-lean ground beef 1 egg 1/4 cup sour cream 6 ounces shredded Swiss cheese, divided 1/2 cup Pepperidge farm stuffing mix DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). 2. Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 teaspoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat. 3. In a large bowl, stir together beef, egg, pepper and sour cream. Stir in the onion and mushrooms. Mix in about 4 ounces of Swiss cheese, and all but 1 tablespoon of bacon. Stir in stuffing mix, and mix until well blended. Shape into a loaf, and place in a meatloaf pan. 4. Bake in a preheated oven for 1 hour. Drain fat, and sprinkle with remaining cheese and bacon. Meatball Sandwich 1 or 1-1/2 pounds ground beef ¾ cup Italian seasoned breadcrumbs ¾ teaspoon dried oregano 2-3 cloves garlic, minced 2 tablespoons chopped fresh parsley or 2 tsp dried 3 tablespoons grated Parmesan cheese Pinch of cayenne pepper, or to taste 3/4 tsp of cumin 2 eggs, beaten Pinch of salt and black pepper 1 small onion, chopped and sautéed until lightly browned 1 French baguette or French bread 1-2 tablespoon extra-virgin olive oil ½ teaspoon garlic powder Parmesan cheese 1 (14 ounce) jar spaghetti sauce Provolone or mozzarella cheese NOTE: If using unseasoned breadcrumbs, add a teaspoon of Italian Seasonings. You can also use any kind of cheese you like. We really liked the blend of mozzarella and Monterey Jack cheeses. I've also made these with sauteed bell peppers and pepperoni slices added to the sauce, something like a pizza sandwich! You can even add sauteed mushrooms. Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, gently mix by hand the ground beef, breadcrumbs, oregano, garlic, parsley, cayenne, cumin, salt, pepper, 3 Tbsp of Parmesan cheese, sautéed onion, and eggs. Shape into 24 meatballs, and place in a baking dish. Bake for about 30 minutes in preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, season with garlic powder, and sprinkle with some Parmesan cheese. Put the baguette into the oven until lightly toasted. While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese or shredded mozzarella cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Red stems and so green:-) Green Acres...big and beautiful... Restless Sea, wonderful blue/green color... and number five,lol, Prairie Moon and Mourning Dove...they go together so well I can not seperate them from each other...
