FRENCH MARKET SOUP IN A JAR Mix 1 pound dried navy beans 1 pound dried pinto beans 1 pound dried Great Northern beans 1 pound split peas 1 pound yellow split peas 1 pound dried black-eyed peas 1 pound lentils 1 pound dried baby lima beans 1 pound dried lima beans 1 pound dried soybeans 1 pound pearl barley 1 pound dried red beans In a very large container, combine navy beans, pinto beans, great Northern beans, split peas, yellow split peas, black-eyed peas, lentils, baby limas, limas, soybeans, barley and red beans; mix well. Divide evenly into 14 lidded jars. Attach a card to each jar with the following recipe: French Market Soup 2 quarts water 1 ham hock 1 1/4 teaspoons salt 1/4 teaspoon ground pepper 1 (16 ounce) can diced tomatoes with green chiles 1 large onion, chopped 1 clove garlic, minced Soak 2 cups French Market Bean Mix in water to cover, 8 hours or overnight. In a large soup pot, bring 2 quarts water and ham hock to a boil. Reduce heat and simmer 20 minutes. Remove ham hock. Stir in soaked beans, salt, pepper, diced tomatoes and green chiles, onion and garlic. Bring to a boil again, skimming foam off the top. Chicken pot pie in a skillet Ingredients 3 Tbsp unsalted butter 1 lb boneless skinless chicken breast, cut into bite size pieces ý tsp black pepper ý tsp kosher salt ü cup all-purpose flour 3 cups chicken stock 2 cups frozen vegetables , (corn, peas and carrots) 3 oz fresh Parmesan cheese, grated 1 tsp dried parsley Cheesy Drop Biscuits: 2 cups all-purpose flour 2 oz fresh Parmesan cheese, grated 1 Tbsp baking powder 1 Tbsp granulated sugar ý tsp kosher salt ý cup unsalted butter, melted 1 cup whole milk Directions Preheat oven to 450ðF. Melt butter in a (10-inch) oven safe skillet over medium-high heat. Add chicken and sprinkle with salt and pepper. Cook until chicken is browned, about 2 minutes each side. Add flour and whisk to combine. Slowly add chicken stock while whisking skillet. Whisk until well combined. Add in vegetables and cheese. Stir to combine. Reduce heat to medium. Allow mixture to come to a boil, stirring occasionally. Meanwhile: In a large mixing bowl combine flour, cheese, baking powder, sugar and salt. Whisk to combine well. Add butter and milk. Stir to combine. Drop biscuits by the rounded tablespoon full on top of pot pie. Place skillet on cookie sheet and then slide into the oven. Bake for 10-12 minutes, until biscuits are golden brown. Chicken pot pie Soup Ingredients 1 lb diced chicken 2 Tbsp unsalted butter, divided þ cup flour, divided 1 tsp poultry seasoning 1 tsp onion powder 1 tsp garlic powder 1 tsp paprika 2 cup chicken stock 1 tsp kosher salt ý tsp black pepper 2 cup milk 1(16-oz) bag frozen mixed vegetables handful fresh parsley, chopped Directions In a large saucepan over medium high heat, add 1 tablespoon butter and diced chicken. Cook until chicken is cooked through. Removed chicken from pan and plate on a plate, leaving cooking liquid in pan. Add remaining butter and ü cup flour. Whisk to combine. Add remaining ingredients (except chicken, vegetables and flour). Whisk to combine. In a resealable jar combine 1 cup soup mixture (from pot) and remaining flour. Shake to combine. Add mixture to soup. Whisk to combine. Add chicken and vegetables to soup. Cover and cook for 10 minutes, stirring occasionally. Garnish with parsley, serve and enjoy! Breakfast Casserole grease a 13 x 9 casserole dish layer with thawed hashbrowns...about 1/2 to 1 inch thick add some pepper add a pound of crumpled bacon or sausage add two cups shredded cheese, i use the mexican four flavor kind Mix Together 12 eggs 3/4 cup milk l/2 chopped onion stir that up and pour it on top of the other goodies Refrigerate overnight...pop in a 350 oven until the top is bubbly and edges are browning...I stick a fork in to make sure the center is done...the cheese will rise thru the egg mixture!! Comments (45)"If I'm in the mood for fried chicken, I go to KFC." Yanno, I USED to be fine with KFC. I don't know what it is about it, but I just cannot eat it anymore - leaves a greasy heavy taste and does not feel good in my tummy at all. I never eat there anymore - just cannot tolerate their fried chicken. But that's okay cuz we have SO many places here that make killer fried chicken. Way too easy to get to! As far as the "art of home cooking", I think it is certainly still there. But for many of us, at least in my case, I am older, live alone, son is off on his own (which means I never have a house full of teens eating though dishes as fast as I can make them), and I swear the older I get the more things it seems I have to do. I always thought it would be the reverse....but it's not darn it. So convenience is much more important for me now. I rarely even eat dinner during the week (I hit the gym after work and really only want a snack when I get home) so I just don't have the need or "want to" to spend time cooking up meals that will probably leave leftovers that get tossed anyway. There are certainly exceptions of course - I seriously crave chicken pot pie when it starts getting cold weather, so that is one of my "singnature dishes" that I take the time to make. And even if the BF does not finish it, I will portion it out into containers and freeze it for my lunches. Some things are worth spending a little time on, LOL....See Moreannie1992
