What pan is this?

I found this in a box of items from the online auction, I really wanted a cut crystal jelly jar in the box, but I'm stuck with the other stuff. Before I recycle it, or Goodwill it, I'd like to know if it's good for anything, LOL.

The outside ring is like a springform pan, and closes with a latch. But the bottom is different. Maybe it was used for the dreaded aspic? Or maybe it's really two different pans, although the bottom fits perfectly? Anyone have an idea?

It's a fancy-dancy spring mold pan. Use it for savarin, cheese cake, molded jello salad (!!!!) or any cake that needs a pretty top.
A long time ago, I had a spring form pan like that...it had 2 bottoms...one like you show and another that was just plain with no "chimney" in the center.
Keep it...I can see all sorts of pretty cake top layers you could make with that.

What type of cookware can I use on my smooth glass cooktop? Flat bottom pans are essential for good cooking performance. Most current brands sold today have flat bottoms. Much older, used cookware and/or thinner cookware will show signs of no longer being flat. Non-flat pans may crack the glass. Use Medium or Heavy-Weight cookware. Stainless Steel is highly recommended. A sandwich clad bottom is especially good because it combines the durability and atability or stainless steel with the heat conduction and distribution of aluminum or copper. Heavy-Weight aluminum cookware is also recommended. It conducts heat faster than other metals and cooks evenly. Aluminum residue sometimes appears as scratches on the cooktop, but these can be removed if cleaned immediately. Copper bottom pans are also good, but they can leave residues on the cooktop that appear as scratches. These can be removed if cleaned immediately, but do not let a copper bottom pan boil dry. An overheated copper pot will leave a residue that will permanently stain the cooktop. Porcelain/enamel pans give good performance only if they have a thick, flat bottom. Avoid boiling these pans dry, as porcelain can melt and fuse to the surface. Glass or ceramic cookware is not recommended. These pans may scratch the surface. Glass is a poor conductor of heat so cooking times will be longer and they may require constant attention during cooking. Stoneware is not recommended. It may scratch the surface and will give poor performance. Cast Iron and Coated Cast Iron cookware is also not recommended. It is slow to absorb heat and could scratch the cooktop. Once this type of cookware heats up, it holds an intense amount of heat which is transferred to the cooktop. I've actually been pleased with my cheap Ikea pans. Cheap enough for a cabin and induction-capable. Similar to All-Clad? Not really. But they do work well. Macy's carries a nice inexpensive line called "Belgique" that is quite pretty and a little heavier. I have some of those too and like them. (I have cheap induction cookware because I was planning to remodel and lose the induction cooktop and wasn't really serious about replacing my old pans at that point). And I do love my cast iron. It feels rustic and would add to the atmosphere of the cabin!

I was wondering if you had some unusual HVAC, oh, like an outdoor wood furnace and I don't know what for cooling - Nubian slaves with ostrich-feather fans, who just happened not to be there at the time? Our tax assessor has us down for electric heat (partially correct, since the heat pump includes radiant heat for those times when the geothermal can't keep up) and no AC. Guess it has to be that way since they're not allowed to tax us on a geothermal system. But I know it looks strange on the tax card. If we ever sell, it might be hard to convince buyers what type of system we have. Though by then I hope geo will be much more common. We have hard water, so the little bit that spits out of the top of the canner (doesn't have a tight-fitting lid) vaporizes around the bottom of the pot and leaves a ring that I just can't get off. I also have some black burnt-on stuff right on the white ring that marks the smaller front burner, nothing seems to get that off (it's probably grape jelly).

Maxdel, I'm glad I'm not the only one. Edlakin, those are the Calphalon Contemporary Nonstick. Apparently, they have "hard-anodized exterior combined with multiple coats of nonstick interior," according to Linens & Things. Reading it again now, they're just anodized on the "outside" of the pan and it's nonstick on the cooking surface. That would make much more sense, wouldn't it? Even then, I'm darn careful with the pans; I figured they'd last more than two years. They do have a "lifetime" warranty, but frankly, I don't want to wait weeks for replacement pans that might have the same problem. I'm planning on switching to a cheap set of Cuisinart Chef's Classic for the time being (they seem to have really heavy duty bottoms), and slowly upgrade to A-C and La Creuset. Thanks for the help!

Carol, I've never made or eaten Savarin. Yeah, I know, I need to be more adventurous! I see that King Arthur has a recipe that looks pretty easy...

LindaC, this one also has a plain flat bottom, that's why I was wondering if it were just a regular springform pan and the fancy bottom just happened to fit, or if it was really manufactured as one pan.

With that "chimney", I'm betting I could make something like pound cake with a fancy top...or maybe a monkey bread kind of thing.

Youcan still buy new similar springforms with several bottoms. Savarin pans are usually shallower and round on the bottom, with a wide center. You definately could make one with yours. Amazon calls the piece "bundt", though the flue is bigger than a regular bundt, and the sides aren't shaped. I think it's just meant to be a general, decorative tube pan. Linda's right. Use it for whatever you want to make. :)

You can bake any cake in it. Ice the cake and put a pot of pretty flowers in the middle!

I got one of those in garage loft...was my Mom's.......

she used for a jello mold.....sure it could be used for a bundt type cake I would think...I did not need it...it was Moms and could not move it on....in loft with her rolling pin.....biscuit mixing pan....actually a whole lot of her other things that are at least a hundred years old.....just going to let our kids move on......

It's the same as one of my old springform pans! I use the flat bottom for cheesecakes and I use this bottom to make bundt-type cakes and love it because it's easier to get the cake released! :)

I would store it with a thin coat of oil. Those I've had have been prone to rust.
Or store in the oven.
I used it mostly at Christmas for Sultana Cake, Madeira Cake, etc.
They unmold perfectly, as partymusic said, and slice neatly and prettily.
