Comments (12)Thanks everyone. I miss you too, but thank the stars that my DH brought his laptop and we can get a connection. We are here with my DH's parents and sister and hubby and their 2 teenager kids. Our room is on the third floor and that just happens to be the only level in this house that we can get a connect. (happy me!) The ocean here is not bathtub warm, but it is warm. Feels cool, but you can just go right in with having to get used to the temp, no matter how hot it is. Feels cooler at night but still not chilly by any means. It seems much saltier to me than the Pacific...maybe because this is an inlet...dunno. Is the Atlantic saltier? Body buoyancy is much greater as a result (or could it be that my increased body fat just makes me float like a cork?----hmmmm. :) They are shooting fireworks again. The Garden City pier is 1.7 miles northeast of our beach house. A nice walk that I have become accustomed to doing every morning. The first day, it was all I could do to climb the stairs every day. I thought I would die from lack of air! I took it a little at a time, and walked a bit further each day and swam out a bit farther each day. Now I am able to comfortably stroll down the beach every morning and having a blast in the surf. At low tide every morning around 5:30, I go out and comb the beach for shells and things. Most of the shells are broken, but some manage to make shore intact. The moonstones are lovely - tumbled pieces of shell or quartz, about half the size of a dime. So lovely. I am finding black shells, which I had never before seen. Found a piece of branch coral yesterday. That is very rare in the inlet. There were some guys on the beach this morning that had been finding tiny shark's teeth. They gave me one - the best one they had. Very cool! I am enjoying the children on the beach. they are so cute to watch and delightful to chat with. The Legend of Captain Jack is one that is famous around here. I asked two little kids this morning who were sitting at the shore digging if they had found any of Jack's treasure yet. They looked up with complete earnest and said, "Nope, not yet". I said, "Me neither. Darn." they bobbed their heads in complete agreement of my sentiments. I asked them if they were searching for buried treasure and they looked up and beamed, "Ya!" "Have you found any yet?" "Nah, but we think these might be broken pieces. Not sure" They held up little black pointed slivers of something, and I could for certain say whether they were or were not pieces of shark teeth, but I suspect they were in all actuality slivers of black oyster shells and not shark's teeth at all....but I was not going to spoil their enthusiasm and fun. Comments (9)I must first tell you I got this off Hallson's site, (thank you Arlene--it's wonderful!) their cooking forum and it is indeed wonderful and wonderfully easy to make. You can shorten the cooking time in the crock pot by putting it together in a large pot first and cooking it abit or at least bringing it up to "speed" to "hot"! Crockpot Chicken Tortilla Soup Place in crockpot 3 boneless, skinless chicken breast halves or cut into small cubes before placing in crock. Without draining anything, combine in crock-pot bowl or pot: 2 (15oz) cans black beans (I use three and you can combine other types of beans as well) 1 (14.5 oz) can tomato sauce or 1 large can crushed tomatoes (I prefer the crushed) 2 (15 oz) cans Mexican stewed tomatoes or "Rotel" (a spicy tomatoe mix in a can I like really well) 1 (4 oz) can chopped green chilies (don't if you use the Rotel unless you like it REALLY HOT) 1 cup salsa, your preference as to strength Pour over chicken and cook on low 8 hours. Just before serving, remove chicken, shred it (if not cubed before), and stir it back into the soup. Stir in: 1 can Niblets corn (I use the white shoe peg corn myself) Heat just long enough to get corn and chicken hot. Serve topped with shredded cheese, sour cream, and crushed tortilla chips. Or put the chips in the bowl first and ladle soup on top.( I love it with just the cheese on top) I have served this at couple of ladie's lunch's with a really good multi-grain bread rolls and they loved it! Saves well and is even better as leftover! Here is a really, really good pear salad I made to serve before this soup: Use 1 pkg Dole Spring Blend lettuce or similar type divided for 6 on individual plates top 5 slices of pear (canned works)(star arrangement) dried cranberries or raisins top with Feta Cheese and top that with the packaged Honey Roasted Almond slices I found a good vinegarette recipe to use that is: 3/4 cup sugar, 1 cup vinegar, 3/4 vegetable oil and 1 tablespoon poppy seeds and 1 tsp salt, heat to rolling boil in sauce pan and keep stirring till sugar dissoves! Cool and drizzle over salad! This salad was a hit! A quick and easy dip for tortilla chips: 1 roll of pork sausage (I use Jimmy Dean original) browned and broken up like ground beef 1 can Rotel (original or milder) 1 pkg. cream cheese Combine all and place in your smallest crock pot! Really yummy! Freezes well, too! I've recently decided I like cooking for small gatherings again! I'm really enjoying finding wonderful recipes o the internet, especially where folks can pst comments upon trying them out for themselves! I've gathered some real winners this month!! I even found the recipe for Tuscany Brio Grille's "Roast Chicken with Butternut Squash Risotto" today!!!! So yummy and "comforting"! Comments (93)Sorry, I just saw this topic, I didn't know it had been resurrected again. Natal, Paula lost weight eons ago. Old news. Do you work for Google? :) Lukk, Paula is the one who made her health public. She's had the disease for a few years now and she is going to make money from advertising a new medication for diabetes. Since she kept it a secret for so long while cooking high carb and DELICIOUS food, lol, speculation is she only "came out" because of the money. Which rubbed a LOT of people the wrong way, even others on the Food Network. Tina, I did see the interview, she's in denial when she said there's only a "few" people who were mean. Once more she hedged and said how much her family loves her. But I guess I'd do the same. It's not going to die down unless she stops those interviews with Al. I'll still watch her show unless she starts cooking "light." Everybody with a brain knows it's all about moderation. It's like telling an Italian cook with Diabetes to can the pasta. lol I have to wonder though, will the drug company still use her now that she's had such bad publicity, so bad that her own, long-time publicist quit on her because of how Paula handled it? Comments (18)I had my mom & MIL for most of May & did some traveling with mom. They left & we went camping at Rocky Mtn National Park for 6 days ... now trying to get ready for our neighborhood garage sale on Friday night & Saturday. I swore I would never do this again (and it has been about 5 years) but I just have too much stuff so cleaned the garage and now hauling stuff out to sell. I did do a little fabric shopping with camping friends in Estes Park, CO. I pulled out a UFO (queen size) that I started handquilting 10+ years ago & sandwiched the Disappearing 16patch. Son's GF LOVED her birthday quilt I left here for her while we were camping. (he said she jumped off the sofa & was beaming!) That's the kind of reviews you like to get! She did leave a lovely thank you card. I need to get started on a baby quilt for July & decide on a pattern for a bunch of Oriental fabrics I have been collecting. I'm thinking of a fan type pattern ... just not sure yet. Still lots of UFOs to get going on also. The weather is FINALLY starting to get nice (even though it rained/snowed/sleeted on us while camping!) so the flowerbeds are calling me to pull weeds - that will wait until next week.
