Picking when COLD out

We have 2 high tunnels planted for winter markets. This is the first year that we are doing a winter market, and has been a learning experience for sure. We have been lucky until now, as it has been very mild out - but that is about to change.

It is my understanding that the cold hardy plants we have can freeze, but must be thawed before you can harvest them. What if that isn't possible? Later this week we are looking at highs below freezing and no sun in sight. I think root crops might be fine to pick, as the soil is not near freezing - but what about leafy greens like kale, collards and parsley? We will pick a few days earlier than normal this week - the last day it will be above freezing - but this is obviously going to be an issue as the winter progresses and we get colder.

Anybody have any harvesting advise to share? Thanks in advance for any insight. :)
