Dendrobium Aggregatum orchid growing new leads while resting

Hey all, so I got two aggregatum orchids earlier this year. Sort advise and place them to get their rest at the beginning of November.

Well the canes got really swiveled and I only lightly misted it a few times and when I say lightly I mean very lightly.

Well this morning while doing my daily inspection I notice that one of the plant started to grow two small leads from two older canes.

My question is: is this normal I mean the plant is constantly dry and I don't see how those new canes are gonna be able to develop with no moisture?

My climate is presently still pretty warm during the day but a tad cooler at nights. None of my phals have even started spiking as yet so I am wondering if the plant is reading that it is still warm so continue growing.

JANEY do you have any idea, since your climate is more closer to mine?
