Help for plants btwn pavers in California

Hi!

I have to admit that I have very little experience with gardening. Everything is new to me, but I am trying to learn more and tackle our large, but overgrown backyard. I would like to put down some pavers but have something green and alive between the rocks. The pathway is full sun for about 5 hours or so then shade for the rest of the day. I am in Los Angeles (inland) so I am trying to limit the amount of water used, and we do not have irrigation in the back yard, so it would need to be something that doesn't grow super fast, and doesn't require a lot of water. I have looked at various suggestions online, but it is hard for me to identify what is the best option given the amount of light, water, and climate involved. Mosses seem like the best options, but I am unclear which would work best. Any suggestions would be helpful!

Also, what is the best method for laying down both pavers and plants/mosses? Do you plant the moss and then put down pavers? Can I do both in the same day?
