Comments (13)Michelle, The recipe comes from a new cookbook I bought at Costco just before Christmas...gotta love that Costco and all their special deals during the holidays! Its called The New Best Recipe from the editors of Cook's Illustrated. I love this book and ordered 2 more from Amazon for b'day presents. Chewy Oatmeal - Raisin Cookies 1-1/2 cups (7-1/2 oz) unbleached all-purpose flour 1/2 tsp baking powder 1/4 tsp freshly grated nutmeg 1/2 tsp salt 16 tblsps (2-sticks) unsalted butter, softened 1 cup (7 oz) light brown sugar 1 cup (7 oz) sugar 2 large eggs 3 cups old-fashioned rolled oats (not quick) 1-1/2 cups raisins Prehead oven to 350 degrees. Line 2 large baking sheets wiht parchment paper or spray with nonstick cooking spray Whisk the flour, baking powder, nutmeg and salt tegether in bowl. Beat the butter on medium speed until creamy. Add the sugars, beat until fluffy. Beat in the eggs, one at a time. Stir the dry ingredients into the butter/sugar mixture with a wooden spoon. Stir in the oats and raisins. Make generous 2 inch balls and place 2 inches apart. Bake until the cookie edges turn golden brown, 22 to 25 mins. Let cool on pan for 2 mins and then transfer to rack to cool. *I used cranberries in place of the raisins The recipe said they didn't add cinnamon because it distracted from the flavor of the oats. If you want a less sweet cookie, use 1/4 cup less sugar but you'll lose some of the crispness. I used an ice cream scoop. They said a smaller cookie would be dryer and more cake-like. When I do the Yellow Cake Mix; with Yeast, again I'll make sure I write everything down. Perfect for your Cinnamon Rolls. I think the recipe you use now, is the same as I use for Challah and Bunns. Been using it since the 50's, when I converted the Army recipe , to home use. But I'm always trying something different. Lpinkmountain: I think you know I'm in the Pocono's. Down at our Rifle Range we have a lot of Blueberry bushes. Sometimes; while we are there talking, a Bear will Pop his head up out of the bushes. Comments (56)Trail, that pie looks fantastic! So the granola came out only so-so. I put lots of healthy, hippie type stuff in it so my SD will love it all the same. On the flip side, the applesauce is to die for! I'm not a fan of applesauce but this stuff I could eat all the time. I'm dreaming of pork chops and applesauce! Decided to give my SD the applesauce: Along with the granola: Also made a whiskey pecan tart & a chocolate tart: Made some Cardamom Coconut rice pudding as well. I think I'm calling it a day. Comments (16)I bake in the wee hours. Getting ready to bake a cake in a bit. Having a Halloween party on Thursday. I always freeze my cake before for easier icing. I'll probably bake something else too. So nice to have a large oven. Maybe a bundt cake or muffins. Mini rant: Of course if it's a warm day the icing will be difficult anyway thanks to stupid California legislatures who banned trans fats in the shortening. So I have to work with unstable trans fat free shortening and my cake will taste less like the usual. All the traditional "buttercream" decorators are tearing their hair out around these parts. I can't buy my base until the last minute since it is not heat stable and my house has no ac. Planning to try a new recipe but it includes butter so still won't help with the issue of weeping and crusting. Thanks nanny state. Maybe I should just do cookies. My black marketed silver dragees just got here. :-D Seriously. No one would ship them, out of fear. I finally found a source but her supply is almost gone. LOL I went and snagged the last 2 bags.
