Advice! Bitterness in Prik Chi Faa Hot Pepper Plant

Hello everyone and thanks for reading!

I have a pepper plant thats in high production mode right now producing around 50 peppers and only standing 6 inches 8 inches high (pretty impressed myself with it)

Two nights ago i snipped two ripe peppers off took a bite out of it, got smashed in the mouth with instent bitterness. The capsaicin burns were irrelevant over the bitterness, i couldn't believe it. I had a winter pod off this guy and it wasn't bitter in the slightest, full of that desired delicious capsaicin taste. Anyway through research i found its from under watering.

what i'm asking the community is, is there a way for me to bring this plant back to a reasonable taste. E.G. providing something else then a 20-20-20 crystallized fertilizer, maybe a 10-17-20 or something or will correcting my watering habits resolve this issue? basically i want to know is there any hope to reduce the bitterness before they all ripped on stem.
