Steam blanching versus Boiling water blanching
Comments (5)Here you go. I think this will answer your question. To steam, use a pot with a tight lid and a basket that holds the food at least three inches above the bottom of the pot. Put an inch or two of water in the pot and bring the water to a boil. Put the vegetables in the basket in a single layer so that steam reaches all parts quickly. Cover the pot and keep heat high. Start counting steaming time as soon as the lid is on. Personally I prefer steam blanching as it just seems less messy and easier to organize to me. Comments (4)The ground almonds are optional in the recipe. I included them because it was the way I had made it. If you don't use them, the sugar amount stays the same (that is, the "rest of the sugar" added when whisking the eggs is 3/4 cup if you use almonds and 1 cup if you don't use the almonds. I have a mini Cuisinart. The blade slides onto a plastic pillar thingy, their instructions call it the "blade sheath" a name that doesn't make a lot of sense since it doesn't sheath the blade - I guess they mean that it goes around the plastic of the bowl that goes around the drive shaft. To spin sharp side first, it slides on with the writing facing up - to spin blunt side first, it slides on with the writing facing down. I'm not sure if this is a bit too finely ground - I liked the bit of crunch of a bit larger almond bits. In any case, I prefer to just toss almonds into the mini-processor instead of having to keep another kind of nuts in stock. Comments (23)Kevin gave me some Girl Scout cookies yesterday that a co-worker of his gave him - Kevin didn't want them because they are oatmeal raisin, and he doesn't like raisins. I tried eating one of them and was very put off by the salty taste of it. I also have some shortbread cookies from TJ's, and they have no salt in them, and taste infinitely better. I hate salt in cookies - there is enough salty flavor from the baking soda. I only buy salted butter by accident, which I did last week-end, but I will use in only in savory dishes that require salt and will not use it for desserts or anything sweet. For me, salt ruins a lot of dishes and I consider it to be a flavor destroyer rather than enhancer when it comes to dishes that are sweet, and that includes vegetables that taste sweet. I understand that some people (such as Ina Garten) want everything to tasty salty, but for me salt makes a lot of dishes unpalatable. Ina puts salt in her shortbread cookies, which for me is a major no-no. I do not understand why some people think that salt belongs in every recipe.
