Question on root bounding and adding soil

Hi all,

I have 7x ~5ish gallon pots. 2x Bhut Jolokia, 2x Trinidad Scorpion, 2x Carolina Reaper, and 1x Chocolate Habanero. Anyways, plants are doing great.. health.. billion flowers and several fruit (I'm in Orlando Florida, so not expecting a lot of pods until the temps cool down a little)..

I have anywhere from 2 to 5 inches of empty space between the top of the soil and the lip of the pot.. can I just add more soil to the top of the existing up to the lip, or should I pull the plant out, put soil on the bottom, and then the big root ball on top and pack it in? I think most of the plants are about root bound now (they're 2-3ft in height).
