Need advice on Nellie Stevens re: Spacing, Privacy, & Design

I've done a good amount of research on this and everything is telling me to go for it, but I have also done enough research to know that I don't want to make a tree purchase I will regret in years to come. And, I'm new to gardening.

We have little privacy on one side of our house. There is a 4' privacy fence that, due to elevations, doesn't cover a ton. (For what it's worth, a 6' fence is not allowed.) I don't want the look of a living fence/privacy screen all the way down the fence line. But, given how big the NS's get, I figured three of them might look nice, once full, and I could add other things to the sides or 6' in from them, which will make the bed look more intentional.

Am I missing something in going with this approach? My understanding is that we need to plant about 5-6' from the fence line and 5-6' from one another. I don't expect to have privacy tomorrow, but I'd like to have some within a few years. Any advice or suggestions are appreciated. Thank you!
