Comments (20)Nancy, I'm back at my home machine now. Here are three variations on the cran-jalapeno jelly recipe! This is the original recipe from Ellie Topp's _Small Batch Preserving_: Cranberry Hot Pepper Jelly 1 large sweet red pepper 2 jalapeno peppers, seeded, or other hot pepper 1/4 cup water 3/4 cup cider vinegar 3/4 cup cranberry juice concentrate, thawed 3 cups granulated sugar 1 punch liquid pectin Finely chop sweet and jalapeno pepper in a food processor. Place in a small saucepan with water and vinegar. Bring mixture to a boil, cover and reduce hear and boil gently for 10 minutes. Strain mixture through a course sieve, pressing with back of spoon to extract as much liquid as possible; discard solids. Pour liquid through jelly bag. Place strained liquid, cranberry concentrate and sugar in a medium stainless steel or enamel saucepan (I use non-stick). Bring to boil over high heat, stirring constantly. Stir in pectin, return to a full boil and boil hard for 1 minute, stirring constantly. Remove from heat. Ladle into hot jars and process for 10 minutes in a BWB. makes 3 cups. When jelly foams you need to skim the foam. 1/2 teaspoon of butter will help keep the foaming down. Variation: Replace 1/4 cup cider vinegar with balsamic vinegar. ***THIS VERSION IS FROM MELLY OF THE SOUTH, WHO ADAPTED IT TO MAKE IT WITH PURE CRANBERRY JUICE AND WHOLE BERRIES; I USED THIS IN MY GIFTS LAST YEAR*** Zabby, I did buy the cranberry juice at a health food store last year. This year I actually found it at our commissary made by ocean spray. This is how I made it last year. Cranberry Pepper Jelly 1 1/2 cups cider vinegar 1 1/2 cups 100% unsweetened cranberry juice 1 1/2 cups total a combination of finely diced jalapeno peppers, bell peppers, and red onions 1 1/2 cups fresh cranberries, coarsely chopped 1 pkg powdered pectin 5 cups sugar This year I think I will reduce the vinegar somewhat and increase the cranberry juice. I haven't decided whether I will use cider or some other sort of vinegar. I have some raspberry red wine vinegar that I used in my cherry pepper relish, so I might use that. If you try it, let me know how it turns out. ---Melly ***THIS IS A FURTHER VARIATION FROM OTTAWAPEPPER (Bill)---BEWARE, HE HAS AN ASBESTOS TONGUE! *** Habanero Cranberry Jelly (I call it Turkeys Revenge). I created (ok, not wholly created LOL) this variation of MellyÂs Cran-Jalapeno Jelly. Using MellyÂs as a starting point and tweaking it with the kind assistance and encouragement of Zabby, the end result is a fiery hot cranberry jelly for cold fall and winter nights. Heck, itÂs great in the summer too! Ingredients: 3/4 cup cider vinegar 3/4 cup white vinegar 2 cups 100% unsweetened cranberry juice 1/2 cup finely diced habanero pepper 1/2 cup finely diced red onion 1 3/4 cups fresh cranberries, coarsely chopped 1 pkg liquid pectin 5 cups sugar Procedure: 1. Finely dice peppers and onion and coarsely chop cranberries 2. In a large sauce pan, combine cranberries, pepper, onion, vinegars, and juice 3. Bring to a boil and reduce heat to low 4. Simmer 15 Â 20 minutes to allow flavors to blend and to soften up cranberries 5. Add sugar and return to a hard boil for 1 minute 6. Remove from heat and stir liquid pectin in well 7. Add jelly to hot sterilized jars 8. Wipe rim of jars with a clean damp towel 9. Position lids as per usual instructions 10. Process in a hot water bath for 10 minutes 11. Remove jars and allow them to cool 12. During the cooling, periodically "gently" invert jars to distribute solids. Comments (13)Raven-- I live in a no man's land between Time Warner Road Runner, six miles south, and Fios, six miles north. I am surrounded by beautiful farms and most of them are owned by Mennonites, who aren't likely to use the internet unless they run a business that demands the service. The area is sparsely populated and there is zero plan for any cable to come our way. I have to use TDS for my land phone and DSL, and DISH for TV. I am retired and have all day free most of the time. There is no competition for the poor folks living in Conquest, NY and I believe TDS takes advantage of that. Thanks for the idea of adding another fan to my tower. I do periodically clean it because I have three cats. It has run hot from the day I got it and it doesn't help that my computer and TV are located in my double wide's smallest room. I absolutely hate using a touch pad instead of a mouse, and I have a wireless mouse for my netbook when I take it on vacation. I don't do anything on my Kindle except order and read books so a lack of keyboard isn't an issue. I was hoping that a good tablet would have a touch screen so I could avoid having to use a touch pad to select programs or mail. My house is 44 feet long and the router/WiFi I have works well in all rooms. I was recently on vacation in Maine where I met up with my son from California. He is a whiz on his iPhone and I would like to be able to manipulate images the way he can on his phone. Clearly, if I wanted to write more than a few words I would go back to the PC. Other than checking email and the weather frequently throughout the day, I always check my bank accounts, credit cards and all the monthly bills I pay online. I use two to four credit cards on a daily basis because I charge everything I possible can, paying cash only to the small vendors who insist on cash payments. I always pay my credit cards in full at the end of the month, so using them doesn't cost me anything. I go for the perks offered by the cards and since I never pay any interest, any benefits I receive are totally free to me. I wait until I am eligible to receive 1% cash back and then collect my "free" money. I really think I would enjoy having a tablet with me so I can check the above mentioned information whenever I have a spare minute. It would make waiting through commercials on TV less annoying. Thank you!! mtnfever - thank you for the link to soft close - I almost wish I didn't have it on the appliance depot drawer -then no one would know how nice it is! motodetroit - I inherited the piece on the side cabinet from DH's mother (I couldn't believe his sister didn't want it!). She got it in Norway in the '50s, and it's a great piece of vintage kitchen ware that sat on her counter for years and always makes me think of her. It has glass compartments (some are broken now) that I assume were used for sugar, flour, spices, etc. We fill it with M&Ms, almonds, popcorn kernals, tea bags and Emergen-C. Here's a better picture: Madeline616 - do you know how long I've tried to get my dog and cat to pose for pictures? Forget about it. And then they just wander into the photo shoot... I'm glad I got a picture of Zelda, our airedale. She's old now, and she doesn't like having her picture taken. taggie - comments like yours remind me that we did the right thing keeping the old cabinets. Two KDs I talked to, but didn't hire, immediately wanted to rip them out and I couldn't understand why, they were classic, worked fine (I realized later that both KDs work for cabinet makers; I don't know, maybe they all do). And keeping them saved me from making all those thorny layout decisions everyone struggles with here. I really had it easy, but thank you for your compliments. dilly ny - I wish I could take credit for the range hood, but it was the only one that would fit our specs. My ceilings are low and, if you notice, the ceiling above the cooktop is lowered even further (there is an upstairs bath above, but no one seems to know why the ceiling descends seven inches above the cooktop) - it narrowed our options in range hoods to this one - sorry, I should have ID'd it - Electrolux 36". dianalo - you are a better man than I. Actually, I know you aren't a man. I have followed many of your comments on the forum. You always have the best attitude. I have to say - cranky and demanding as I am - one of the things I love about reading GW commenters is how MELLOW you all are. In the midst of hair-curling disasters! How do you do it? I don't think they're anything special, but I'm sure if I were replacing the the cabs, I would have had to pay quite a bit extra to have a set of drawers like these installed. Helped us decide to keep the cabs we had. We keep container lids in the first drawer, the matching containers in the second, napkins in the third and table cloths in the bottom. Great storage.
