Frozen veggies complaint.

I rely on frozen veggies a lot because with additions it is a good dish and I have to be careful of the goitergenic veggies. Anyway our local markets quit handling my favorites and they nearly all have frozen peas, carrots, corn and green beans in some form. They all don't cook in the same time and I always use my steamer. I am going to have to figure out something to take the place of the green beans. They always end up hard and uncooked. Also they have been adding some kind of like navy beans that are hard. I love asparagus but they only order what they like.. Anybody else have this problem.? Just for me. I suppose they only order the cheapest brands. I have to add my own seasonings. My favorite was Pictsweet but it is long gone. Thanks. Barb

I quit buying frozen beans years ago for that reason. No matter how long I cook them, they are hard and unappetizing.

I like frozen petite whole green beans from Aldi when I use frozen, and always keep a package of them in my freezer. Regular (mature) sized green beans seem to be much tougher. I vacuum-seal them in FoodSaver bags for freezer storage.

Have you considered freeze-dried veggies? I really love them. So easy to use and they have wonderful flavor and texture. If you don't want to purchase them in #10 cans, you can purchase them in smaller sizes to give them a test run before investing in the large cans. I vacuum-seal them in user-friendly portions in canning jars after I open a #10 can so they keep fresh longer.

I'd suggest Mountain House brand (www.mountainhouse.com). Other places sell Mountain House and many have them on sale occasionally, so compare on-line prices. You can take out a portion from the small packets in the amount you need and zip the seal shut until you need them again, or use the whole packet for 2-servings. For instance, if I have a cup of leftover rice I will rehydrate a tablespoon or two each of peas and corn and add it and some salsa to the rice for Spanish rice. I also use a lot of freeze-dried fruit. These are a part of our home food storage.

Sorry to be late here too, but figured I would add my herb-ituaries to the list. Deaths Cucumbers - I haven't had any luck this year with cukes. The seeds I set barely germinated, then died. I bought plants after the freeze, but it was still cool and all but two of them died. Bush Beans - They were germinating and I had a few that had sprouted. I covered them with a sheet, but no luck- they all went to bean heaven. Squash - My crookneck squash all died. I wimped out and bough some seedlings from Lowes today to replace those. Survivors: Tomatoes - I covered them with buckets and they all lived. Strangely enough, I even have blooms already setting on some of my Better Boys. Peppers - Bell peppers lived with covering. Banana peppers barely pulled through, too. Squash - Zucchini squash fared very well. I only lost one out of 9 plants. Corn - I was worried because it was only 2 inches tall when the frost hit last week, but it lived and seems to be growing fine now. Broccoli - Not surprising, since it's a cool weather crop. My broccoli is the biggest thing in my garden right now. Morning Glories - About half lived!

My parents had popsicles (the kind on a stick wrapped in paper, not the ones in plastic "tubes") in their upright freezer. All melted, even right after running generator. I think the pork chops on the top shelf were frozen solid, don't know how warm they might have gotten in between "shots" of electricity, but I really think I should throw out the 5 lbs of hot dogs I brought home to put in my chest freezer - they were cold, but thawed, and who knows how warm they might have gotten at some point. Same with the big bag of Chicken Voila in Alfredo sauce - bag had some frozen chunks in it, but overall was pretty squishy. What's a few more things given that on Sunday we threw out all my mom's Jenny Craig meals she's just bought a few days before, and on Thursday threw out a good 40-50 lbs of veggies, chicken pot pies, chicken cordon bleu, stuffed peppers etc. that my mom had bought for my dad to eat while she was on a business trip, plus about 10 lbs of tilapia and shrimp? My dad also had a sandwich-sized bag with 3 hard hot-dog-shaped things I think might have been venison sausage - not frozen solid, I'm sure, maybe smoked? Insisted I take that to put in my freezer. I have no idea what it is, so don't know if anyone can tell me if they're safe. I have to tell him to watch his blueberries for mold, too, though I think he uses them frozen on his cereal, now they've refrozen into a solid chunk. I'd just as soon make jam out of them like I plan to do with my blackberries and strawberries. DH is looking at whole-house generators too. I'm thinking of seeing whether we can add our well pump to the 100A subpanel our HVAC, water heater and basement freezer are already on. I don't know if inspector will let us permanently change the fridge to go on the subpanel as well as the well pump, unless we put our resistive Aux Heat for the heat pump on the main panel (even in the dead of winter I think we can survive with geothermal and sweaters). Gotta think how to swap things around to balance the load and get all the necessities on that 100A panel. Then maybe an $800 generator will do.

We usually get the "Valley box" which is the most local with everything coming from their farm or neighboring farms. The regular box goes a bit farther afield to get more winter variety. We get one regular box every 2 weeks and it works pretty well for supplying most of the produce for the two of us but we get some from the store to get additional variety. It is more economical for us to get that every two weeks instead of the $25 small box every week. It seems like your farm might be trying to cater to those who like fancy baby vegetables (which are pretty expensive in the store) instead of providing a reasonable quantity. My mother separates mixed frozen veggies she gets on sale. Dad does not like the 'blends'. She has a table next to the freezer in the breezeway shed and takes a bowl with her and takes out a bowl full of frozen and takes what she wants...they don't eat much because they eat small snack meals. He likes his roasted sweet potatoes with cauliflower rice. Broccoli with a small steak. The rest in soups. In their late 80's now they don't garden much but i gave them seeds for a compact variety of zucchini and some mixed micro salad greens they have planted and are very happy with that. I did not see anything trite, self-centered or food snobby discussing frozen peas...many on a cooking food forum are just putting out there what they do and hope for some ideas for their pantry/freezer. Initially i did not see a mention of poverty or the elderly. Just a sharing of a good basic freezer stock. I stock baby peas and baby limas in the winter. Frozen spinach is just a good bargain any time of the year. Other veg frozen are from my garden. Or the farm stand like corn i cut off the cob, then freeze. I have a big freezer because of my garden and over 100 tomato plants. I keep forgetting about nutmeg! Such a special flavor and i need to try it with beans. Artichoke hearts frozen i forget as well. We have one great dish and artichokes in season are 2 for 5 dollars so it is a seasonal treat. Not very often. Frozen is often a better option for out-of-season veggies. Or those that do not grow well as Annie mentioned. I had great years for broccoli and cauliflower and nothing the past five or so with so much heat...basil was destroyed once again...bunnies maybe. No fruit on the trees from a late frost but tomatoes are gorgeous. Beets gone from a critter but radishes and garlic are beauty. Early peas are now leathery but inside are good shelled. Hoping string beans will be good this year. I plant sooo much as seeds are cheap and always get something great.... Leeks are expensive here so i grow a big bed of them and freeze. I spent high school frozen cold with a kerosene heater in a small kitchen/tv room and grandparents that layed out paper towels on the counter to dry and recycle and Pop pounded on the bathroom door to remind not to flush and only use a sprinkle of water to wash hands...with a sign that read "drips dribble dimes down the drain". I've worked very hard to not have a food budget as an adult but got up this morning at 5am and made stock from smoked organic chickens from the weekend and made salad for DH lunch and three meals and froze 4 pints for future soups not because we are food poor but because it just tastes so much better. And i just enjoy it. (then worked a 14hr day). Like every day. I bet my food budget if i cared to keep track is so much lower than most by not buying processed foods.

For green beans, I have found that Trader Joe's haricot verts are quite good. They are thin so cook up well. The price is generally not bad. This summer, I hope to harvest enough green beans to dehydrate, known as little britches in the South. They supposedly have a deeper flavor.

I have tried to appreciate frozen veggies but it just does not work for me unless it is going to be pureed. The only ones I find work keeping around are frozen corn, frozen petite peas, green beans and spinach.

My store actually seems to be carrying more kinds of frozen vegetables than ever before. I can find frozen asparagus now, which I rarely saw before. And frozen summer squash. Neither one is all that great but something to toss into a soup or pasta or stir fry occasionally. Also frozen mixed peppers, which are great to add to things.

I keep corn, peas. pearl onions, French cut green beans and spinach as frozen staples. And kaffir lime leaves.

Do you freeze your veggies together or in separate packages.? I like to use the combiination of veggies . That has b een my problem though because the recent ones do not finish at the same time. The green beans and other beans that they have been inserting in these combination packages. I am debating about putting my own packages together. I think if I do that, I will have to microwave some of them before putting them together. That complicates matters. Thanks all. Barb

Barb, are you talking about vegetable packages with names like "Farm Blend," California Blend," "Country Vegetables," etc.? I like two corn blends: One has corn, red bell pepper, and broccoli; the other has corn, cut green beans, and carrots. You're right. They are difficult to cook just right. The broccoli in the one usually ends up a bit overdone, while the one with green beans & carrots needs to cook quite a bit longer otherwise the green beans are still too raw.

Maybe the idea of having separate vegetables and combining them as you're cooking would work. For example, cook the frozen green beans and carrots about 4 minutes before adding corn. Or combine all the vegetables that cook at about the same time in packages. Keep the green beans separate and microwave them first before combining with the other vegetables. I'm sure you'll come up with a great solution.

I posted about this on the Harvest forum. I love those veggie combos, I got some on sale once and have been hooked. But they are pricey so I was thinking about making my own. One of the posters on Harvest said that he saw something about how they make them on TV, that they freeze them separately and then combine. Seems like they could cook the beans or carrots or firmer vegetables a bit before combining to assure they all reheat evenly. Anyway, some blends are better than others I have found. I love the convenience of them, and great for me as a single person, that they come in single serving containers.

lpinkmontain- I, like you, love the small containers for one person, but unfortuniately, they have a very high sodium count. At least, those that we have here, mostly, brocccoli and cauiflowerm but unfortunately, those veggies are not compatible with me, even though the sodium is so high. Sometimes can tolerate the cauliflower but too much of the broccoli is a detriment.

Yeah so I was thinking I could do up my own freezer veggie combos tailored to my taste starting with fresh vegetables and then freezing them in those plastic containers you can buy at the grocery. But I don't know if they would turn out good. The only thing I do sometimes is roast up a whole bunch of vegetables with some EVOO and seasonings, and then freeze some. That's usually pretty good thawed out and microwaved. I've never tried anything with peppers, carrots or green beans though.
