Please clarify this butter question......

Help! my brain isn't working on this one & I need a quick answer.

I'm baking the original Nestle's Toll House Pie w/ GD shortly (for a school project). In the reviews people questioned the amount of butter called for in the recipe - 3/4 Cup. Those who had success said they went by using 1 and 1/2 sticks of butter - one stick being 1/2 cup & half of that being 1/4 cup.

That's where I was headed until I read in pllog's post in the "measuring machine" thread where she wrote, that one stick of butter measures one cup.

So, how do I measure out the proper amount of butter for a recipe that calls for 3/4 cup but doesn't specify if it's by weight or volume?

A stick of butter is 8 Tbsp is 4 oz is 1/2 cup. And butter weighs the same as water (or, close enough) so no conversion needed.

Never mind - Just brought up recipe again and they actually list 1 1/2 sticks beside the 3/4 measurement.

I panicked when I read the measuring post and suddenly felt like the woman who couldn't measure, lol. Sorry, I feel more pressure than usual since GD has to present the product to her math class ;)

In ancient times when man had not gotten around to inventing the wristwatch, the most reliable source of telling the time was the sun, moon, and stars. It is more than likely that each farmer had a planting calendar based on the moon phases, and there would be different variations depending on the geographical location. As their calendars were passed on through the generations they evolved to cover the different crops they tried to grow, and the more productive farming techniques used. It was noticed that different plants grow better when they were planted during different phases of the moon. Presumably, each of these phases imparts an influence on the way vegetation grows on the planet, through whatever forces may be active. To provide more accurate records it was even noted that certain crops fared better when planted while the moon was in a specific constellation, not just light or dark. Can you really dismiss something out of hand, simply because you don't understand it? Could you tell us the source of these recipes please? They both strike me as personal recipes rather than tested and approved ones but I could easily be unaware of some approved ones. If they are personal or blog recipes someone made up then refrigerated storage rather than canning would be recommended. The only "approved" thickener is Clear Jel. Cornstarch is specifically listed as a no. The Guar Gum is an unknown - never tested. In lieu of thickening prior to canning, if one doesn't want to use Clear Jel then any thickeners are added after opening the jar. AFAIK there are only 2 approved recipes that allow for using prepared mustard in canning. Personally I wouldn't have any problems with the first recipe simply because of all the vinegar in it but both the prepared mustard and the cornstarch will break down in processing and separate so I'd use Clear Jel instead if I was going to make it. I'd pass on the second recipe given all the flour. But both recipes are what I call "niche" recipes - complex ingredients with minimal use and appeal - so it is difficult to justify the supplies cost and time of making them. Just canned up some apple butter today and love it. I used Annie's Grandma's Old Fashioned Apple Butter recipe which uses apple cider. Don't know if making it with cider made it better or not, but I know I really like the results and will continue using it since I still have about 2 pecks of apples to use up. From Baking 911 Each type of fat used in cookie recipes separately affects the cookie's texture and taste. Generally, the use of butter means a flatter, crispier cookies because it allows the dough to spread as it cooks on the hot cookie sheet. Cookies made with shortening will not spread, however all shortening will give you a cookie without a lot of taste. This approach gives you the best of both worlds: shortening is not as sensitive to shifts in temperature and the butter gives a lot of flavor. Shortening: Least spread / Least flavor, however can use butter flavored. Because of its higher melting point (98 to 100 degrees F) than butter, cookies keep their shape as it bakes, yielding a puffier more cake-like treat. Stick Butter: Medium spread / Best flavor. Because of the lower the melting point of butter (92 to 98 degrees F) than shortening, cookies spread and become flatter and crispier as the result. To help reduce cookie spread when using butter, freeze the formed dough on the cookie sheets. When you place the frozen cookie dough immediately in the oven, the fat will stay colder longer and when baked, the cookie will retain its shape better. For flavor, there is no substitute for butter. Cookies made with butter have outstanding taste and a finely grained, often crisp texture. Butter also helps cookies to keep well and maintain their flavor. I recommend using unsalted butter in baking. Stick Margarine: Most spread / Some flavor Vegetable oils: cookies are softer than those made with butter or margarine.

OMG!!! I'm so sorry, Amck! That's totally my fault. I sometimes omit words when I type fast because my mind has moved on before my fingers have caught up, but, since I was giving directions, I tried really hard to do a good job proofreading and still didn't catch that I'd omitted the word "half" (since childhood, I always think of it as one box is one pound is two cups is four sticks). I've fixed it now. I'm so sorry to have caused the panic! Deepest, sincerest apologies!!!

I hope the cookies are fab and the presentation is even better.

Regarding the measuring, if your wrapper isn't labelled with TBSP and cup measures it it looks wrong, you can soften the butter and pack it into your standard measuring cup and you'll see that a stick is half a cup. You could weigh it to see if your stick really is a quarter pound. Or you could check the labelling on the box for the package weight to make sure it's not one of those three quart "gallon" jug of milk kind of innovation.

No worries, pllog ;) I would have skimmed over it had there not been discussion in the recipe's reviews about the amount of butter used. Had to dash out for quick errands and didn't have time to parse it all out before I posted for help.
