A nice spinach salad with fresh strawberries and garbanzos.
Grilled Portabella, marinated in soy, ginger and sesame, served with wild rice or quinoa and fresh steamed asparagus.

I love Betty White and would love to host a small dinner party for her.

We'd start the evening with mini pate a choux pastries stuffed with shrimp paste, roasted prosciutto wrapped asparagus, assorted fresh veggies and fresh tzatziki sauce.

She's a vodka drinker, so I would make sure that I had a best quality brand at the bar, ice balls made of distilled water, and Meyer lemon wedges and slices.

Let's start dinner with a small salad of Bibb lettuce cups, filled with sliced grape tomatoes, chopped cukes, red and yellow sweet pepper, our local creamy goat cheese crumbles, local watercress, the tzatziki sauce as dressing.

I think that I'd marinate a pork tenderloin to roast or grill, mashed sweet potatoes (made like white potatoes), zucchini and yellow summer squash sauteed in a little butter, sauteed MacIntosh apples seasoned with honey and sharp Vietnamese cinnamon, chopped pecans.

Dessert options will be lemon mousse and chocolate mint silk pie, tiny ginger cookies which have a bite.

I've read that Betty loves the music of Johnny Mercer and his contemporaries. There's NO better background music for the evening but I'm thinking of a little dancing after dinner. I'll have to choose my male guests with care!

Thanks, Wildchild for the invitation. I work out of town four days a week and have been doing so since February. This was when I started losing weight. Prior to this I worked at home and had WAY too much refrigerator access. While I am here I walk in the mornings before work between 45 minute and an hour and do a light weight work out. At home I am able to do a longer weight work out. I just use dumbbells. I have no scale access while I'm out of town so I don't weigh while I'm here. I find that if I don't get enough sleep I don't lose weight. Today I had grocery store sushi for lunch, I wish I had any kind of idea about the calorie count is in this stuff! I had a few fresh figs for dessert. Lots of water all day. I still have at least 50 pounds to lose. Seems like a long long journey sometimes. I really want to be thin right now! I didn't have any patience with WW, I hate sitting still for meetings! And I don't have the fortitude to go back several times and check out the different meeting leaders to see if one suits me better than another. One thing I have noticed about the WW (and many others as well) frozen meals is that the sodium content is rather high. I have just eliminated cookies, chips, crackers, bread and butter, and all fried foods, as well as ice cream. More vegies and fresh fruit and smaller portions. More exercise. So far so good. BarnMom

Here's a good recipe for shrimp cakes that I think would go well with the rest of your menu. I have made rosemary roasted potatoes to go with them. I think you could skip a veggi, since you are doing the veggi pasta, but I think a tossed salad would be nice. Asian slaw would be too strong a flavor that goes in the wrong direction, IMO. These shrimp cakes are nice when having company as they are done ahead and quick to cook just before serving. Gingered Shrimp Cakes 1 lb. large shrimp, cooked 4 scallions, sliced, green parts included 1 Tbsp freshly grated ginger Grated lemon zest from 1 lemon 2 Tbsp chopped fresh parsley 1/2 C fresh corn, cooked, cut off cob (can use frozen) 1 lg egg 3 Tbsp mayonnaise 1/2 tsp hot pepper sauce 1/2 tsp salt Pinch of ground black pepper 1 1/2 C fresh bread crumbs or panko (divided) 2 Tbsp olive oil (or more, for frying) 1 Tbsp butter (with the oil, for frying) Coarsely chop shrimp in bowl. Add scallions, ginger, lemon zest, parsley and corn. Combine mayonnaise, egg, hot sauce, salt and pepper and fold into shrimp mixture. Add 1 Cup breadcrumbs and gently mix. Form into 4 patties and gently dredge in remaining 1/2 C breadcrumbs, adding more if necessary. Put on a plate, cover with plastic and refrigerate for at least 30 min and up to 4 hours. Heat oil and butter in large skillet over med-high heat. Saute cakes until cooked through and golden brown on both sides, adding more oil to skillet as needed, about 8 minutes. Chile Garlic Sauce (optional) To make Chile-garlic cream sauce, combine 2 Tbsp chile-garlic sauce ( from Asia aisle at supermarket and is sweet) and juice of 1/2 lime with 1/2 cup sour cream or cream fraiche. Spoon about 3 Tbsp of sauce on each plate and place shrimp cake on it, serve immediately. Makes four servings. Variation: Substitute lump crab meat for the shrimp. Nancy

If we can include Friday, then I got to sew this past weekend!! It has been ages since I had the better part of the day to do nothing but sew!! I did have to shuffle kids around a little and make them some lunch, but it was very quiet for the most part. My dh went with a friend to pick up a new truck in NC and didn't get home until 10pm. It was soooo nice. Saturday we took the boat out and Sunday after church we took the kids to see Brave. Wonderful movie if you haven't seen it. I'm planning a camping trip for my Girl Scout troop for next weekend, so not much sewing this week or next weekend.

rhizo, how do you know she's a vodka drinker? If I had to guess, I would have said Manhattans with a cherry for her. She reminds me of every Manhattan drinker I've ever known. :O)

I dug through some interviews, just to glean some basic information; she mentioned in a couple that she prefers vodka over ice, if anything. I expect that she really doesn't drink much, in reality.

I read that she's a vegan (previously vegetarian), so I probably would not serve her meat and dairy.

What was her character on the Mary Tyler Moore show? Ruth Anne? Had the cooking show at the tv station. I would google that, maybe try one of the recipes she "cooked", when her character wasn't making the moves on all the men! LOL
