    I didn't know about this, but I just took a loaf of banana nut bread out of the oven... :)

    the bread in the pic....what does it have in the center...it looks yummy?
    One year I got a huge box of bananas at an auction. They were so good but I knew they would go to waste if we just tried to eat them. So I made banana bread. Lots of banana bread. Kept it in the freezer. we had banana bread for months.

    Help ... about four bananas spent a few days forgotten in the car ... then were all black (on the outside) ...

    Wow, thanks, it looks wonderful with the cream cheese … I'll have to try that, yum!!

    This is a recipe my mom had, but with some tweaks of mine. I don't cream or sift or anything, just throw it all in and mix it with my hand mixer. I grease the loaf pan with Country Crock and bake at about 350º. It takes 50-60 minutes depending on how much banana and whether it's in the glass or metal loaf pan (glass takes longer). I run a knife around the edges when it comes out and let it cool for at least 1/2 hour before trying to remove it onto a plate.

    1 stick soft butter (original said 1/3 cup shortening)

    1 tsp vanilla

    2 tsp baking powder

    1/4 tsp soda

    3/4 tsp salt

    2/3 cup sugar (I use brown but white also works)

    2 eggs

    1-3/4 cup flour (I use whole wheat)

    2 large or 3 small ripe bananas

    chopped walnuts (as many as you want)

    My favorite banana bread recipe:

    Sour Cream Banana Bread

    • 1 cup sugar

    • 1/2 cup oil

    • 2 eggs

    • 1 cup mashed bananas (2 medium)

    • 1/2 cup sour cream

    • 1 teaspoon vanilla

    • 1-1/2 cups all-purpose flour

    • 1 teaspoon baking soda

    • 1/2 teaspoon salt


    Preheat oven to 350F. Grease and flour bottom only of a 9 X 5 loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour

    cream and vanilla, blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking soda and salt, stir just until dry

    ingredients are moistened. Pour into prepared pan. Bake at 350F for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely. Makes 1 loaf.
