Comments (5)I think you could add some lovely breads or rolls. Personally, the spinach/gruyere soup sounds a bit heavy - but not having tasted it, I don't know. I would probably be inclined to do a fresh spring pea soup (perhaps served cold) instead. Are you serving all this at one time, or in courses? I am thinking that you could use some other beverage, as you have a lot of fruit things going on, and something non-fruity might be nice. Comments (8)How about a breakfast casserole? BREAKFAST CASSEROLES Caramel French Toast 1 loaf French bread (thick sliced ~ can use egg bread too) 1 stick butter 1 cup brown sugar 3 tablespoons Karo Syrup 6 eggs 1 1/2 cups milk 1 tablespoon vanilla cinnamon fresh fruit Melt butter and brown sugar and Karo syrup over medium heat stirring. Bring to boil and then pour into 9 x13 casserole pan. Lay slices of bread over caramel mixture. Mix eggs and milk and vanilla and pour over bread. Sprinkle top with cinnamon and cover with plastic wrap. Refrigerate over night. Uncover and bake in 350 degree oven 45 minutes. Serve with fresh fruit and syrup (optional) Breakfast Casserole Spray 9x13 pan with cooking spray. Line with biscuits (the pre-made refrigerated ones that you Âpop open) Sprinkle with shredded Monterey Jack & Colby cheeses On top of this, add whatever meat (cooked and drained) you prefer: Bacon, ham, sausage or sliced (thin) Kielbasa Whip up 8-10 eggs and 1/4 cup milk in a bowl. Add a dash of salt, pepper, dry mustard and tabasco. Pour this over everything and bake in a 350 oven for about 20-25 minutes Breakfast Casserole (Prepare this one the night before and refrigerate until ready to bake) Preheat oven to 350 degrees Frozen hash brown patties 1 lb. good breakfast sausage (fried, crumbled and drained well) 1/2 med. onion grated 8 eggs 2/3 c. milk 1 c. grated cheddar cheese Line a buttered 8 x 8-inch glass baking dish with frozen hash browns. Add sausage and onion. Beat eggs and milk together, pour over the sausage. Top with grated cheddar cheese. Cook for 40 - 45 min. Cook's note: Sometimes I beat a couple of teaspoons of prepared mustard into the egg/milk mix. Just double or triple the recipe Orange, carrot and ginger soup SERVES 2 2 carrots, peeled and sliced 2 tbsp olive oil half a large onion, chopped 1 garlic clove, chopped 1 inch piece of fresh ginger, finely grated zest and juice of half an orange 500ml vegetable or chicken stock salt and black pepper creme fraiche, to serve (optional) ------------------------------------------------ prep 1. In a saucepan, gently cook the onion in the olive oil until softened. Add the garlic, ginger and orange zest. Cook for a minute or so and then add the carrots and pour in the stock. 2. Simmer until the carrots are very tender. Using a hand blender, blend the soup until smooth. Add the orange juice and season with salt and pepper. Blend again briefly to mix. 3. Comments (37)Yes, thank you for all the suggestions ... some really great ideas for what makes a nice luncheon. That soup does look delish...very much like what I make often. I talked it over with DH and knowing who these folks are and their expectations, and given the season, I think it will be the ham with fresh pineapple, the oven roasted veggies, my whole wheat biscuits and a wilted cucumber salad with dill. One guest is bringing an appetizer, the other dessert. So we've got that covered. Part of the attraction is this being pretty much make ahead lets me spend my time enjoying the company and not have any last minute futzing. I did consider color, and the ham is pinkish, the pineapple yellow and the veggies are colorful white and orange with red from the cranberries and brown from the nuts and green from the parsley, and the cucumber salad has some green in it.
