moving old rose

I moved a very old & neglected rose from a neighbouring garden. I don't know what it is, but it has a beautiful fragrance. I potted it, and a month & a half later it has shoots coming off it. I don't know much about roses and someone told me I should cut the shoots off as it might be a grafted rose, and the flowers would be different. But it is a very old rose - must be at least 20 years - so would it be grafted?
I'd like to know if I should cut the shoots off, and also should I prune the thick unsightly branch?
Photos are attached - the 1st before I moved it
Are there any other things I should do? I'm watering it a lot.
