Comments (3)I have the Staub grill pan which I use on my induction cooktop. The shape of it (a rectangle) means only the center portion gets really hot though they also sell a smaller square shaped one. The LC one is square. It works fine to add nice grill marks but so far, things stick to it pretty bad. I am going to try seasoning the surface by coating with oil then baking the pan for 30min and see if that helps. Mostly I just use it as a small broiler pan which it works well for as in that application, it is pretty easy to clean up. Comments (25)Cast iron is excellent! There is no reason you cannot use it on electric. Although I have a gas stove, and prefer cooking on it, I have used all of my cast iron cookware on electric as well. There's just a tad more learning curve with electric, and a smooth surface would require you to be careful so as not to damage your stovetop. You can also take cast iron camping and cook over wood or charcoal with them. Take care to season your cast iron and care for it, and you'll get a lifetime of use from it. Enameled cast iron such as LC and Staub are also excellent. I have a lot of cast iron cookware from Lodge Manufacturing (made in the USA) from skillets, to griddles, to bread pans. My eggs slide right out of the pans, and I now cook pancakes on my round griddles because I didn't want to use nonstick electric griddles any more. I had a slight learning curve as to what burner settings to use initially for best results, but I would never go back to all the junky small appliances now. I use low to medium settings for most things. High heat setting when frying potatoes. If you decide to try a cast iron pan for eggs, make sure to use enough butter initially with it until the pan becomes well seasoned. Contrary to what all the "studies" show, real butter is very healthy for you, and I have lost weight without trying after starting to use enough butter to make things taste good. Comments (29)I'm on my 2nd glass top. The first was kind of gray with speckles and I LOVED not having to clean coil burners, nor have things boil over and run down into the top of the stove. Where I ran into problems was canning..I have an aluminum steam canner and for some reason it caused the top of the stove to discolor. Also, boil-over of sugary food (jam) that I couldn't remove from the burner until it was finished cooking, which burned on in the process, also was impossible to remove. It wasn't dirty, it just burned up the gray speckles which made it look darker than the rest of the stove, thus looked dirty. I considered induction, but wasn't sure I had the wiring capabilities in my home, plus I have collected 40 years worth of my favorite pans, some of them not compatible with induction. So I got another glass top. This one is shiny black and I am determined to keep it looking new. It is a pain! Not really a pain to clean, but the fact that I have to clean it EVERY time I cook something. It never looks good just wiping it down, so I use the ceramabrite cleaner, which takes a fair amt of time to get wiped down to the nice shiny glass look with no streaks. I also bought a countertop burner to use for canning. If I live long enough, I'll get an induction next time and just pay for new wiring and new pans.
