Comments (2)I never heard of any pickle recipe where you didn't use boiling liquid. Beans have to be blanched before you freeze them to kill the enzynes that cause spoilage and an off taste. The same can be said of pickling. I don't think your pickles would last long before spoiling unless you use a hot liquid Dilled beans are very good. Comments (7)Back the years when I was picking 40 pounds of Kentucky Wonders a day, my family loved Green Bean Salad: French-cut fresh green beans - 4 to 6 cups homegrown lettuce (or the best you can get from the supermarket) 2 slices bread 1 tbsp. butter 1 tbsp. olive oil 2 clove garlic, flattened with the side of a knife Oil and Vinegar Dressing (below) Boil or steam the beans until just tender, then shake over heat to dry. Sprinkle lightly with salt. Pour the Oil and Vinegar Dressing over the hot beans. Cook, uncovered, 2 to 4 minutes, then chill, covered, in a glass salad bowl. Heat the butter and oil in a skillet. Brown the garlic in it, then remove garlic. Fry the bread in the skillet until golden on both sides. Just before serving, break the lettuce into bits and toss it into the green beans. Crumble the bread and add, tossing again. Oil and Vinegar Dressing: 4 tbsp. olive oil 1 tbsp. vinegar 1/8 tsp. dry mustard salt and pepper to taste Blend all ingredients. Makes 1/4 cup. Comments (14)This is another good one made with pecans. Haricot Verts with Roasted Pecans 4 cups French green beans 2 tablespoons butter 1 tablespoon olive oil 1 tablespoon brown sugar ¼ cup chopped pecans 1 teaspoon salt ½ teaspoon black pepper 1 tablespoon lemon juice (½ lemon) 1. Wash and trim the stems off the beans. Boil them in a stock pot for 4 minutes. Dunk beans in ice water to stop the cooking process. Drain the beans and set aside. 2. In a heavy skillet, melt the butter with the oil. Stir in the brown sugar until melted. 3. Add the pecans and cook until lightly toasted. 4. Add the beans and toss until coated. Cook for 5 to 8 minutes. 5. Season with salt and pepper. Finish with lemon juice. Serve immediately....See More- 11 years agolast modified: 11 years ago
