do you use capons for soup?

as difficult as it is finding capons for sale these days (where i am, at least), i have always preferred using them for my thick "cream of" chicken soup. major comfort food in the winter and with superior taste, IMO!! at this moment, i have two in the freezer, with plans to make soup out of one of them this week.

anybody else use capons, for soup or whatever?

Capons are in my opinion the perfect roaster. Expensive. Large - usually in the 6 to 9 lb range. I've never used them to make soup. Except for the carcass.

Coq au vin!

They're a special order around here, and I don't bother. We get gigantor chickens, however. I'm always making the butcher weigh them for me looking for small ones. If I want a big, tough bird, I just buy one of the larger ones. :) It's not the same, of course, but easier.

Here are a couple of tasty variations in different colors: Red Lentil Soup With Lemon (NY Times 1/9/08) Time: 45 minutes 3 tablespoons olive oil, more for drizzling 1 large onion, chopped 2 garlic cloves, minced 1 tablespoon tomato paste 1 teaspoon ground cumin 1/4 teaspoon kosher salt, more to taste 1/4 teaspoon ground black pepper Pinch of ground chili powder or cayenne, more to taste 1 quart chicken or vegetable broth 1 cup red lentils 1 large carrot, peeled and diced Juice of 1/2 lemon, more to taste 3 tablespoons chopped fresh cilantro. 1. In a large pot, heat 3 tablespoons oil over high heat until hot and shimmering. Add onion and garlic, and sautÃ© until golden, about 4 minutes. 2. Stir in tomato paste, cumin, salt, black pepper and chili powder or cayenne, and sautÃ© for 2 minutes longer. 3. Add broth, 2 cups water, lentils and carrot. Bring to a simmer, then partially cover pot and turn heat to medium-low. Simmer until lentils are soft, about 30 minutes. Taste and add salt if necessary. 4. Using an immersion or regular blender or a food processor, purÃ©e half the soup then add it back to pot. Soup should be somewhat chunky. 5. Reheat soup if necessary, then stir in lemon juice and cilantro. Serve soup drizzled with good olive oil and dusted lightly with chili powder if desired. Yield: 4 servings. ============================================================ Yellow Split Pea and Sweet Potato Soup (www.wholefoods.com) 1 cup yellow split peas 1 quart vegetable broth 1 medium sweet potato, peeled and cut into Â½-inch slices 7 whole green cardamom pods 1Â2 tablespoons ghee (clarified butter) or canola oil 1 medium yellow onion, chopped 1 teaspoon garam masala 1/2Â1 teaspoon ground cumin lemon Cayenne pepper sea salt, to taste ground pepper, to taste Soak the peas in water to cover overnight. Drain and rinse. Bring vegetable broth to a boil in a medium pot. Add soaked peas, sweet potato slices and cardamom pods. Reduce heat to a simmer and cover. Simmer for an hour. (N.B. I skipped the soaking and gave the split peas a 15 minute head start and simmered until the peas and potato were falling apart -- less than an hour) Heat ghee in a skillet over medium heat. Add onions, garam masala and cumin and cook for 10 minutes, stirring often. When sweet potatoes and peas are tender, add the spiced onions to the pot. Stir and cook another 5 minutes. Not sure if I have a favorite - probably New England Clam Chowder, but I never make that. Yesterday I made minestrone, and here is the recipe I used: Minestrone Soup Ingredients: 2 tablespoons olive oil 1/2 cup minced white onion (about 1/2 small onion) 1/3 cup minced celery (about 1 stalk) 2 chopped zucchinis, chopped 2 teaspoons minced garlic (about 2-3 cloves) 2 cups water or vegetable broth 2 tsp vegetable soup base (if broth is not used - dissolve in the 2 cups water) 1 (14 ounce) can diced tomatoes (or whole tomatoes pur�ed in can) 1/4 cup carrots, shredded 2-4 tablespoons minced fresh parsley 1 teaspoon dried oregano 1/2 teaspoon ground black pepper 1/2 teaspoon dried basil 1/4 teaspoon dried thyme 1 to 1 1/2 cups water or vegetable soup base 1 to 1-1/2 tsp vegetable soup base (dissolved in the water, if broth not used) 2/3 cup small shell pasta (orzo, or similar) 1-3/4 cups cooked red kidney beans, drained* 1-3/4 cups cooked small white beans or great northern beans, drained* 2 cups fresh baby spinach (optional) 2 tbsp tomato paste or 1 tbsp tomato powder salt, to taste, if soup base is not used Directions: Heat the olive oil over medium heat in a large soup pot. Saut� onion and celery in the oil for 4-5 minutes or until onions begin to turn translucent. Add the zucchini and garlic and saute a couple of minutes more. Add vegetable broth to pot, plus tomatoes, carrot, and spices. Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes. Add additional 1 cup hot water/vegetable broth (more, if needed), pasta, beans, spinach leaves (if desired), and tomato paste, and cook for an additional 20 minutes or until desired consistency. Less water will be needed if the spinach is used. Add salt to taste, if you are not using soup base. I use Better Than Bouillon brand vegetable soup base or one that I get from a restaurant supply store. Use more parsley if you are not adding spinach. *Note: I use 7/8 cup of each dried bean to yield the amount needed and cook the beans earlier in the day or the day before in plain water with a couple of bay leaves. I simmer them in the same pan. Alternatively, canned beans can be used (14 oz can each), drained and rinsed. Another favorite is Posole: Lars' Posole I recommend that you soak more hominy than you need, and you can freeze the leftover for later use. It is best to use hominy that is in pieces rather than whole kernals. Ingredients 3/4 cup dried white hominy corn (maiz trillado blanco) - about 2-1/2 to 3 cups when soaked - rinsed canned hominy can be substituted 2 tbsp canola oil 2 tbsp olive oil 1 medium onion, chopped 6-7 cloves garlic, minced, or finely chopped 1 red bell pepper, chopped 1 green bell pepper (or 2 Anaheim chilies), chopped 4 serrano peppers, finely chopped, some seeds removed 1 tbsp cumin 2 tbsp chili powder (I use Ancho) 1 10 oz can of Rotel tomatoes (or tomatoes with chilies) 4-5 bouillon cubes (vegetable flavor) 2 cups water (or reserved liquid from soaking) Cilantro, for garnish Grated cheddar cheese (optional) Directions To quick soak the hominy, place it in a pan and cover with triple depth of water. Bring to a boil, cover, and remove from heat. Allow to soak for about 2-3 hours, and then drain the water. You may need to check periodically to make sure there is enough water covering the hominy. Save the soaking water if you want to use it as a thickener for this or another dish. While the hominy is soaking (or almost ready), you can begin the rest of the process, starting with chopping all the vegetables. The pieces should be fairly small, but not minced, except for the garlic and serrano peppers. Heat the oils in a large saucepan (Mine is 4" deep) and add the chopped onion, peppers, and garlic. Saute for a few minutes, or until the onion becomes a bit translucent - it does not need to cook thoroughly, and you do not want to make the vegetables too soft. Turn off the heat, and stir in the cumin and chili powder. Add the canned tomatoes, bouillon cubes, water, and drained hominy. Bring to a boil, and cook covered for about 20 minutes. Serve in individual soup bowls with chopped cilantro, stirred in at the last minute. You can also add grated cheese if desired. Some people add lime juice, but I prefer to leave it out. It is traditional to serve this with shredded cabbage and fresh lime juice, but I did not know this when I made up this recipe. Mine is vegetarian, but it is usually made with pork in Mexico. Lars

We've eaten their soups for years without any distress. DH likes soup with a sandwich for lunch in cooler weather. We often split a can. "Progresso" is a General Mills brand. We usually prefer the "Healthy Choice" soups (Con Agra). I wish they'd put them in an easy-open can though. (Don't you wish you had the patent on those pull-tab cans? lol)

It is hard to go wrong with split pea soup. I prefer using a ham bone, but if I don't have any, I do use a couple of ham hock chunks. The ham bone usually has some nice bits still clinging to the bone, and I shred them and add to the soup when it is done and has been pureed. I add carrots, onion, celery and usually any odds and ends in the refrigerator such as left over green beans, broccoli, squash, a potato or two. I use water to make the soup and add salt, pepper, a bay leaf and maybe a dash of nutmeg and a dash of Worchestershire sauce. After 2 or 3 hours or so, I remove the bone, bay leaf and any meat and whirl it in the blender or use the blender wand. Then I shred any meat morsels and return them to the pot. It is always tasty, no matter what odds and ends I throw in.

My cousin raised capons and they were so wonderful roasted. I'd suggest you roast it and save the carcass for making soup (add a few chicken feet, chicken backs or wings if you need more volume than just the carcass). The method at the link below will give you perpetual broth for a week if you cook it in a slow-cooker.

Another who would not use a capon for soup . To me it is the king (well a king in a pre capon life) of roasters. The carcass is perfect for soup/broth but the meat would be wasted.

I get it about being hard on the budget, but for the kind of soup Roxanna described, I can see using capons. I'm envisioning more of a stewed kind of soup, or something like chicken and dumplings, minus the dumplings. Capons are the best for stewing, and it makes sense they'd be good for that kind of rich soup.

Capons are a premium roaster. As Sharon said the king. Definitely not tough. If you are just looking for soup birds, look for a hen. Makes wonderful rich broth.

The best chicken to make stock:

Go to an Asian store, they sell free ranged old chickens, the whole chicken minus feathers, head to tail.

They are specially farmed just for making stock.

They also sell $1.00 a bag chicken bones for making stock.

dcarch, not everyone lives in an area with big Asian stores. I'm lucky to have one tiny store so I can get specific ingredients.

beachlily, I have no Asian stores here either, and I haven't made a trip into Grand Rapids for months now, other than to take Amanda Christmas shopping. I think I might be about due for a day trip.....

I seldom see capons here either, and when I do they are very expensive. For soup I use my old stewing hens, those who are past "laying" age, but they aren't good for much else except a rich and flavorful broth.

Which reminds me that I really like creamy chicken soups, but Elery doesn't, so I haven't made one in a while. I need to, and he can eat pizza that night!

Capons are by definition just castrated roosters. Not all are fed up on milk and tenderness!

I remember when there were stewing hens, capons, roasters, and spring chickens in the markets. Wow, that does "take me back"!

I like roasted capons. Always used stewing hens for soup broth. Nowadays, with the bland supermarket chickens, I wait until I've roasted a chicken, then use the carcass for broth. I usually augment it with either duck, or turkey necks, for more oomph.

Capons here are fed on milk and tenderness and are a luxury item that you certainly wouldn't make soup out of!!!
A coq for coq au vin is an old rooster - that's for braising. Much darker meat.

Capons are great if you're having a holiday meal for a smaller crowd; I much prefer roasted capon to a roasted turkey.

The only ones I find around here are frozen, but they taste fine. I've never seen fresh capons in the stores here.

Note one thing: a capon is, as mentioned, a neutered male chicken. There's also something out there called a caponette, which is 'chemically castrated'--i.e., given hormones to keep him from attaining roosterhood. I'm not too keen to try one of those.

Caponizing used to be a farmstead skill; now it's hard to find anyone who knows how to do it. A lot of the small scale chicken growers I know just order 'x' number of chicks from a nursery, and you can specify male, female or straight run.

Ann ~ i don't actually have a recipe, but here's what i do for my soup. first, boil the bird until meat is tender. cool until fat solidifies. i remove the lovely fat and divide into portions of about 2-3 tablespoons into sandwich bags. then i finely chop the meat and make that into 1--2 cup portions (give or take). these all go into the freezer to be used whenever i wish. a pack of fat and one of meat = enough for a pot of soup. the broth gets strained and concentrated a bit by boiling down. here i add one or two grated carrots and a couple of onions finely chopped (any size -- i like lots) and a good handful of very fine egg noodles.

there is never enough broth to make more than one or two batches of soup, so when it is gone, i just use regular store broth. (the fat gives much flavor, of course!)

for the soup. i melt the fat and add flour to make a roux -- amount of flour is variable, as chicken fat will absorb more flour than butter in a roux. when the roux is thick enough for my taste, add broth/water/noodles and cook until of medium thickness. i also add some Savory Choice Liquid chicken broth Concentrate if the flavor needs boosting. salt and pepper to taste.

this gives me a fairly thick soup, and is so good and comforting.

many folk would not like this method, as i do use the chicken fat. that's how i get a thick-style end product,. at my age, i just will not worry about the extra calories -- i just want my soup the way i like it! of course, any other chicken soup ingredient you like could be added, or leave out the onions if you wish, or larger noodles, i suppose. whatever you like!

Roxanna, I don't have any problem at all with using the chicken fat, and I "save" it in the freezer if I have any extra from any cooking project. I know some other members here also save the "schmaltz".

I also render lard and I'm thinking I'll do the same with some grass fed beef fat, it's gotta be better for me than hydrogenated shortening and that kind of stuff. I use real butter too, I think moderation is the key, not complete avoidance. Of course others disagree with me, and tell me of the "poisonous" nature of saturated fats. I ignore them. (grin)
