Bathroom Countertops

We are replacing our bathroom counter as part of our bathroom update. Hubs is refinishing our solid wood cabinets that have a medium oak finish. Floor tile is white with slight gray in it, gray grout. Walls will have to be redone as we are removing a drop ceiling. I am not sure if I want to put wallpaper back up there or paint.

The countertop is 60" long and we need double sinks. I would go with granite but am afraid to do so because we use aerosol hair spray and it tends to make the surface of the counter feel rough, not sticky. Right now the laminate that is on there has been there since 1989. No shine left to it where the hair spray falls.

What surface would be the best? Soapstone, quartz, or granite. What are the pros and cons to each? I do have granite in my kitchen and for the most part I love it, except for the water deposit buildup around the faucets - grrr to that.
