Well, we don't celebrate Thanksgiving here, but as I work for a US bank, it makes for a quieter day. So I tend to appreciate it, even so!

All have a happy day and may I ask you cooks out there, if you are not exhausted from the preparations could someone please give me a recipe for pumpkin pie.
And . . . what do you US gardeners do with all your surplus squash? We had a good crop after a very hot summer, but the mild and wet autumn means they are not going to store over winter. Is it possible to freeze them?

Vee, many pumpkin pie recipes call for sweetened, condensed milk; and that makes a very good pie. I'm sure you can find one by googling. (The favorite U.S. brand is Eagle Brand milk.)

Here is a pie that is easy to make and very good:

STOVE TOP PUMPKIN PIE

1 baked 9-inch pie shell
1-1/2 cups cooked pumpkin
2/3 cup granulated sugar
1 Tbsp. flour
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/8 tsp. ground cloves
1/4 tsp. ground allspice
1/2 cup milk
2 eggs, beaten
1 Tbsp. butter

Mix milk and beaten eggs together in a medium saucepan. Add the pumpkin. Stir the dry ingredients together and add to mixture. Put in the butter and cook over medium heat until mixture boils and thickens.

Pour into prepared baked pie shell. Cool, slice, and serve with whipped cream.

I just came back from a much needed walk. My sister always outdoes herself, and expects us to as well....groan. But it was delish, with lots of fun company. And since it was a gorgeous day, we held our celebration outdoors - just splendid (its our reward for putting up sith 6 months of summer)

The one good thing about having a shorter growing season and an earlier Thanksgiving (2nd Monday in Oct) is that by the time Christmas rolls around, I am ready for a turkey feast again. (One month is too short!)

Carolyn, many thanks for the recipe. We are able to get condensed milk (and evaporated, don't know the difference) over here. Many years ago 'poor' people used to stir it into their tea and feed it to babies instead of fresh milk . . . yuk.

Vee, our evaporated milk is double strength canned milk and used to be de rigueur in making baby formula by cutting it in half with water, adding 2 Tbsp. of light corn syrup, and heating it inside the bottles in boiling water for 20 minutes. Ask me how I know.

Condensed milk is quite thick and very sweet. We are now able to get it in both low-fat and no-fat varieties. Unlike no-fat cream cheese and sour cream, I can't tell the difference in the milk and have begun using the no-fat kind.

Carolyn this milk thing has really got me thinking. I must check out the various labels on the tins/cans when next at the supermarket. I don't think we use the canned stuff very much at all.
Do you know if the mixture for babies formula is still used today? Over here everyone has become very aware of sugar and the health problems it poses.

Oh, no. Now baby formula comes either premixed and ready to go or in a powder to be mixed with plain water. Many more of today's moms breast feed than in my day (the mid-50s) when it was definitely out of vogue, or at least they start the infants off that way and then switch to formula, since many young women go back to work. One of my nieces began to leave breast milk in a bottle for her little one when she started a class, and it made him too lazy to work at breast feeding. She had had a three-month maternity leave and just went ahead and switched to formula as it was almost time for her to go back to work anyway.

Re canned milk, we have a lot of recipes that call for both evaporated and condensed milk. This may be a hold over from the days when rural people didn't have refrigeration, but those milks do make for smooth, creamy desserts.
