I think figs and pomegranates are normally rooted (not grafted), so there wouldn't be any separate rootstock with them. Pawpaws and jujubes would normally be grafted, but I don't think there are any rootstock choices for them either (just their respective seedlings). There are rootstock options with persimmons, but I've never heard of any of them having any more of a dwarfing effect than another. Some varieties of persimmons are smaller than others, though. The majority of the Asian persimmon varieties available in the US would be dwarf size no matter what the rootstock. Apples and pears would be the only things you mentioned where dwarfing rootstocks would come into play. You may, however, want to choose better anchored more disease-resistant rootstocks and rely on more aggressive (esp. summer) pruning to keep your trees to a size your space will allow. I know very little about pear and apple rootstock differences, so I can't make any particular recommendations for you.

Treelover03. It should work assuming you are familiar with grafting. It is not practical to attempt to add half a tree with a graft. Most people add a few buds and them let it grow into a small tree. I'm currently grafting dwarf a inter-stems to callery roots and them add a fruiting variety on top. This allows for a stronger root system combined with the inter-stem to keep the tree smaller. Well, I would be careful mulching under the tree, then. You want to make sure your tree's root area is draining well. Clay can be wonderful soil to plant in, as it is rich in minerals (your micros). But, it can have drainage issues as I'm sure you're aware. For citrus, it is helpful to plant them on a mound, to promote better drainage. If your tree continues to appear chlorotic, I would increase your fertilizer (lemons just seem to need more fertilizer in general, I have found, especially Meyer lemons), and make sure your root area is not staying too wet. This can cause an overall chlorotic appearance, as the roots are being damaged by too much water (suffocating), and are not able to take up nutrients.
