Good shelling bean

Anyone grow beans for fresh shelling, like peas? If so, which one(s) do you like? I'm looking for taste but also easy shelling.

Sorry Ray, I have tried but I can't grow beans. But from memory I think the runner type beans are good for shelling. ie Scarlet Runner. They keep coming up each spring for 6 or 7 years as well.

how about broad beans?? we always picked them when they were quite small and would sit at the table and shell them like peas.....my brother wouldn't eat them so my dear old grandma would sit and take the outer skin off them and tell him they were French Peas!!! It worked!! He ate everyone of them.....Tina

I'll second Fusion's recommendation for "Goose"; I have often posted about the closely related "Ma Williams", which I obtained from SSE. Highly productive, outstanding quality as a shelly, but just OK as a snap. I tried a few "Blue Marbut" raw, but never tried them cooked as snaps. It was very productive as a black-seeded dry bean, I made some good refried beans from them. As a rule, I tend to use dual-purpose beans as shellies, rather than dry. Most shellies are usable for snaps as well, although varieties bred for snaps will generally outperform them. The best dual-purpose varieties I've tried (including the two above) are heirlooms: - "Brita's Foot Long" (pole) closely resembles the white-seeded version of Kentucky Wonder, but with more flavorful seeds. They are roughly the size of Great Northern. The pods are tasty as snaps, but should be picked very young, before strings develop. - "Bert Goodwin" (half-runner) has long, straight pods that have great flavor as a snap. If allowed to ripen, they will form large, deep red seeds that are tasty also. Probably the best multi-purpose bean I've tried. - "PI 507984" (bush) is an otherwise unnamed bean from the USDA, collected in Hungary. The young pods are OK as snaps, but its best use is as a shelly. The beans are borne in great numbers on very vigorous bushes, and are easily shelled. They are deep red w/white spots, and extremely large in shell stage, close to 1" long. The flavor is very rich, and the shellies keep much of their color when cooked. The red turns to nearly black when dried. To the best of my knowledge, the last three are unavailable commercially; Salt Spring Seeds (Canada) carries "Brita's", but will not ship to the U.S. If you are interested in trying any of them, I'd be happy to send you some seed, just contact me through my member page if interested. Oh, and lest I forget... the best dry bean I have grown is "Soissons Vert", a pole "flageolet" variety with light green seeds roughly the size of Great Northern. It is not usable as a snap, but the shelly is gourmet quality, and it makes a great dry bean.

1. Any particular reason for white beans? You seem to want shellies (green shelled beans) while many/most of the white seeded cultivars can be used for this purpose, The speckled beans like the horticulturals are most often used. Those developed as snap beans are just harder to shell than those designed as shell beans. They are harvested when the beans are full size and the pod has changed color, but not dry. 2. Lima beans are harvested when the beans are full size for green shell. Dry of course, you just leave them on the plant until the pods dry. For green shell, if you can shell them, they are ready to pick.

If the beans are still white, they are not yet fully ripe. The red-speckled shelly beans (such as "Lina Cisco's") tend to develop red streaks on the pods as they ripen. These streaks darken as the seeds within approach maturity. When the pods begin to shrivel - which is the prime shelly stage - some of these streaks become purplish, and the pod will be noticeably limp just below the stem. The beans will have the best color at that stage. As Farmerdilla mentioned, that stage does not last long. To get the best-colored beans requires frequent picking; I would recommend at least ever other day, if not daily. However, some prefer the mix of green (or white) and color; in which case, for bush beans such as "Lina Cisco's", you would only pick them once or twice, and perhaps let some go for dry seed. The shellies will usually be a pale version of the dry seed, so the darker the color in the dry seed, the more color will be retained as shellies. (Some will turn gray or white regardless of their markings.) Black and the near-black maroons & blues produce some of the prettiest shellies. The shellies below (from a Hungarian bush bean) all have dark maroon-black markings when dry, so they retain much of their color even after cooking. "Giant Red Tarka"

This is from "The Book of New Israeli Food" by Janna Gur BASIC HUMMUS DIP Ingredients (serves 8-10) 1lb 2oz. small dry chickpeas 1Tblsp + 1/2 tsp baking soda 1cup raw top quality tahini 1Tblsp freshly squeezed lemon juice 2 cloves garlic, crushed salt to taste Directions 1. Soak the chickpeas overnight in a large bowl of cold water with 1 Tblsp of baking soda. 2. Drain and rinse the chickpeas and put them in a large pan. Add water until it reaches 1 inch above the chickpeas. Add remaining 1/2 tsp of baking soda and bring to a boil. Cook covered over low heat for 2-3 hours, until the chickpeas are very soft. Cool slightly, drain and save some of the cooking liquid. 3. Put the chickpeas in a food processor, add 2/3 cup tahini and process until smooth. If the paste is too thick, add a few tablespoons of the cooking liquid. Season with lemon, garlic, and salt; taste and adjust the seasoning. For a richer creamier version, add the remaining tahini and process until the hummus is completely smooth and fluffy, *****Galilee Style Hummus Set aside 1 cup of chickpeas. Puree the rest with 1/2 cup tahini and the seasonings. Add the whole chickpeas and mix, slightly mashing the chickpeas. The texture should remain somewhat chunky.

What about bortolli beans. I like cooking with them more than navy or cannellini beans.

What time of year do you sow the bortolli Helen? Are they a summer or winter bean?

I should have said common beans, not broad beans. I grow those too but they come at a different time.
I have some runner bean seeds so I'll try those. I don't know bortolli beans but I have some called barlotti/borlotti, those speckled ones you get in soup mix packets at the supermarket. I'll try those too.

Ray, I grew Borlotti once but never again. They twined everywhere and were a bit of a nuisance. I expect that you would need a lot of plants to get a good yield. At the end of the season I let the Banjo french beans seed for next year but I would imagine that the space the shell beans would take up would be too precious unless you had a big area. Eden have a good range of drying beans as I'm sure you already know.

oops my spelling leaves alot to be desired. I tried to grow a bush variety of borlotti bean last year. Grasshoppers got it.

Pepino it is a summer bean.

If you want dried beans for winter cooking then you can't go past Tongue of Fire a bush var or for Black Beans there are Black Turtle or Canadian Black which tolerates cool conditions better and yields better too for French beans you can dry any of them for winter cooking and of course you can't go past Lazy Wife or you could try Cannelini Beans...al of wjhich I can send you...plus a few other climbing French types

Just came on line to find out about Borlotti Beans and here you are !! I've been mega busy outside so nearly missed this thread. First question - do they need staking? I bought the Bush type, but from experience with Bush type tomatoes they might still need some support? I'm trying to cut down on work, because the greenhouse is nearly built - just the covers to put on when we finish the path into it. These are the only beans I can cook that don't make the old man f**t so worth giving them a try. What sort of yields would you expect from about 60-80 seeds or should I give some away? Even though some of you have had bad experiences with them I'm still game to have a go. Thanks guys - back to the concreting.............Linda

Can't help with yields Linda. Some bush beans are just that, and don't need support, others really should be described as semi-vining. Can't help with bush borlotti, sorry. And well-done on the green house. Piccies when finished, please?

Though I am looking for beans that will dry, I'm particularly interested in fresh-shelled beans (yummy), so I'm looking for ones that shell easily, and taste good of course.
I've heard that Barlotti/Borlotti make good fresh shelled beans for flavour, but I don't know about ease of shelling.

Okay, I have plenty of bean varieties so I'll just experiment and plant small quantities of a dozen or so, and report back at the end of the season.
