Planting citrus in mulch?

i'm the gardener of the family, my dad just got 3 citrus trees, a grapefruit, an orange and a lemon, the soil here is very rocky and clay based, he dug holes about 1ft deep and about 18inch wide, are those holes big enough, also he filled them up with mulch but since citrus need a ph of about 6.0-7.0 i would be thinking the mulch would be 2 ascidic as this is just decomposing plant matter from the tip, i was thinking the holes are 2 small and he would need 2 fill them up with top soil, also adding a clay breaker 2 help make the soil below better, can someone give me a bit of info 2 tell my dad so we can have good sucess with these trees, its just been a while since i been doing much gardening stuff
