Beetroot usually grows well anywhere. I use pig, cow, or horse manure (whatever I can get) and chook manure pellets and blood and bone. Dig it to a spades depth. They like full sun too.

By chance are your beets planted too close together? I always leave 4 inches between seeds. I use very organic soil kept very loose by spading, and usually pull them at smaller than the size of a tennis ball as I believe they are sweeter when smaller. Regards - Jim in So. California

I usually stick my finger into the soil and feel around the root to see how big it is.

You haven't told us much about which zone you live in. Yes you can plant these roots and yes you can expect a harvest, but it will be flowers and seed pods. The plants will be very large and tall, maybe six feet tall. You will probably have to stake them.

I would do as Linda Lou suggested and refrigerate (uncooked). They should keep well for that amount of time. Select firm fresh beets without soft moist spots. Trim the leaves and stem down to about 2" long. Don't wash the beets. Place in a plastic bag, squeezing out the air. Refrigerate. This way they should last for about 3 weeks. Carol

Thanks engineer. This is such a different style of Borsche then what I have ever seen and I really think that I would like the addition of chicken. I have only seen it with beets alone. I can get some great beets at the Farmers Market during the summer so I am looking forward to trying something different to use with them.
