pH, lime and organic matter

I understand roses in general are tough and grow anywhere but I understand they grow particularly well in South Australia where soils are alkaline. Have I got that correct? I notice when I give mine a dose of wood ash or some lime they seem to put on a better show. I have buitl up beds of heavy clay that I have added tonnes of organic matter to over the years. This organic matter breaks down very quickly and has to be constantly replenished. Doesn't organic matter make the soil slightly more acidic and should I be adding a little lime now and then. If so, how often and how much per square metre. I do check the ph from time to time and it usually around 6.5 - never more than that. I like to understand what I am doing that's all.
