Gamthi curry plant is used in curries while the regular Helichrysum italicum is not edible. As to the tall and short aspect, if you live in an area of frost you will automatically have dwarf. If in tropical area then it will reach 20 feet or more.

You can take cuttings of now. You can use a powder or liquid rooting hormone. Just remember to not overdo the hormone as a little goes a long way and too much will actually cause the darn things to not root at all or very little. Use a fast draining media such as 1/2 perlite and 1/2 pumice for the cuttings...I have used sand in the past with some success but like the 1:1 mix best. Keep in a bright but shaded location. Too much misting and humidity can cause fungus growth on the fuzzy grey foliage. Keep the rooting media moist (not wet) to ensure root production. Root zone heating is recommended for faster rooting especially if you are doing this indoors. It will take at least a month for good roots to appear and in optimum conditions you should be able to transplant at 40 days.

Actually Murraya koenigii is not the curry plant, it's the "curry tree". Here are some terms that might be helpful: "Curry plant" Helichrysum italicum; fragrant, but not used in cooking. "Curry tree" Murraya koenigii; aromatic leaves used in cooking similarly to bay leaves. Is not used in common western-world-style curry. Can not be used in Dotty's curry chicken recipe. "Curry leaves"; same as curry tree. "Curry powder"; in the US/Britan, etc., this is a mix of coriander, turmeric, cumin, fenugreek, and red pepper, with some occasional extra minor ingredients. It's our westernized view of curry. "Curry"; if you live in the US, this means curry powder. If you live in India it generically means gravy, sauce, or a mix of spices. - Tom

Are you talking about the ornamental curry plant? I think it's Helichrysum or something like that-- the fine leafed silver one? I have a little start I can send you-- has roots and is growing in a container of mine right now. I've never fertilized mine, with the exception of the occasional miracle grow in the watering can...
