Should vegetables be precooked before canning?

It is not necessary to precook vegetables. In fact there are 2 methods for canning vegetables, the 'raw pack' and 'hot pack'. Using the raw pack method you simply pack the raw vegetables in jars before placing in a water bath or pressure cooker to heat and seal. The heat kills the microorganisms. Hot packing a jar refers to cooking vegetables first before placing them in jars and then on to a water bath or pressure cooker.
