Smoked turkey?

DSIL brought up a 12lb smoked turkey to make Christmas Day, I have never made one! Ever.

I think I've heard they are basically cooked and all you do is warm them. Am I right or wrong?

I know someone here has made them, what did you do?

I've smoked mine for years. Never bought one. They are delicious!

Are you fully cooking the turkey by smoking? If so, treat it like any cooked meat. We smoke/roast a big turkey every Thanksgiving. We eat some of it over a day or two, the rest is frozen. I prefer to break down the whole carcass as soon as it's done so I can put it into the stock pot. The big joints are cut off the bones which also go into stock. This is to minimize the space it takes in the freezer. We keep some of the meat in the fridge to be eaten but everything else is in the freezer within hours of taking the turkey out of the oven. You can boil them and that will take out some of the salt. But since they are already cooked, They might be a little dry after boiling them again. You might try just soaking them in some warm water, and that will also remove some of the salt and smoke.

Do you mean one of those Reynolds turkey cooking bags? I would think that would be fine. I would guess 325 for about 1 1/2 to 2 hours should make it nice and toasty and the bag will keep it form drying out. Good luck! Alexa

I agree with the above except to say that a mild wood like apple or alder will give you a mild smoke. Hickory or mesquite will give you a bit more in your face smoke. I prefer alder and pin cherry, two weed trees around here. And I split any chicken or turkey I'm smoking. Gets you way more surface area to get that smoke into/onto. Simple to do, just cut down both sides of the backbone, remove and flatten the bird. You will hear the breastbone crack. Plus a 2D bird smokes faster than a 3D bird. Lastly, properly smoked you will get what is called a smoke ring in the flesh. That can be fairly pink. Do not check to see if its done via sight, use a thermometer. The pink will be right under the skin, not at the inner bones. Tough to do easily on a gas grill as they are too hot. The inexpensive water smokers or the vertical propane smokers sold in hardware stores work real well and most of them have a recipe book that includes a bird method. And aren't too expensive either. You must know, also, that once you get into smoking stuff there is no going back. Its like owning a boat...bigger, better, more. I had four smokers rattling around my yard at one point. Now I'm down to two, plus grills.

This is smoked and frozen. I opened the box it's in and it looks like a meshy netting is around the bird. Then sealed in plastic. She bought it from the Hutterites (sp) that come to her work place and said everyone that's bought one says they are great.
So I just warm it for an hour or two and that's it? Or do I need a rub or anything?
I am totally clueless here you guys.

It can be served warm or cold. Smoked turkey is great. A friend smokes one and brings every year to the annual picnic. Talk about getting "gobbled" up!

Smoked, Peppered Turkey December 3, 2009

This is the best for those who do not want to cook a whole turkey. It comes fully cooked so all you have to do is heat it up ~or not!
We've gotten this same turkey breast the past couple of years and will continue to do so! Love it!

*this was a quote from a site that sells them, so i'm assuming you reheat as you would smoked ham, slowly...*

They are very good. It tastes sorta like ham. Just warm it up and your ready to eat.

We used to smoke turkeys even when it wasn't "turkey season". They're soooo good. You could just bring it to room temperature if you need the oven for other things. I hope you enjoy it.
