Cheesy Potato Recipe needed

Actually I have a cheesy potato recipe that calls for creamed soup, shredded cheddar cheese, sour cream and frozen hashbrown potatoes. I need to make these for Christmas Eve night but I'm at my in-laws in the day for their Christmas. I need to be able to put these in the crockpot and last time I tried this, it didn't work so well.

So, does anyone have a crockpot recipe for some type of cheesy potatoes?

Here's a recipe. I've never made it in a crock pot so your on your own. You can also substuite the soup for cream of chicken.

Hash Brown Casserole for the Slow Cooker

Prep Time: 15 Minutes
Cook Time: 4 Hours Ready In: 4 Hours 15 Minutes
Servings: 16

"The traditional hash brown casserole side dish is made even easier. Prepare ahead of time and start cooking when you need to. This dish is also great to take to parties."

2 cups sour cream
1 (10.75 ounce) can condensed cream
of mushroom soup, undiluted
2 cups shredded processed cheese
1/2 cup chopped onion 1/4 teaspoon salt
1/4 teaspoon pepper
1 (32 ounce) package frozen hash
brown potatoes, thawed

Directions:
1. In a large bowl, stir together the sour cream, cream of mushroom soup, cheese, onion, salt and pepper. Gradually mix in the hash browns until evenly coated.
2. Coat the inside of a slow cooker with cooking spray or butter. Spoon the hashbrown mixture into the slow cooker. Cover, and cook on High for 1 1/2 hours, then reduce heat to Low, and cook for an additional 2 1/2 hours.

That's similar to what I have. I'll just have to try it on low and have another can of soup or some other liquid on hand. Thanks. I'll wait to see if anyone else has a different recipe.

Consider that you have two options. One is to find a recipe to actually cook in a crockpot. The other option is to cook in another method, and serve it in the crockpot to keep it warm. I like the second option best, you have a lot more choices of recipes. Here's one I like a lot. Take small red potatoes (2 to 2-1/2 inches). Wash, then microwave for about 5 minutes (well, for 5 potatoes for the two of us, plus leftovers, it's 5 minutes; for more potatoes, I'd do it in batches). Cool enough to handle, cut into 1" pieces, leave skins on. Toss with EVOO, S&P, chopped parsley, whatever other herb mix you like (there is no right or wrong), and some fresh grated parmesan cheese. Place on oiled baking pan, I try to keep then all close together but only 1 layer deep. Bake at 425 for about 10 minutes to brown. Transfer to crockpot for warming/serving.

My family used to love this one. Haven't made in years, but so yummy. Bacon Potato Cheese Soup 8 slices bacon, fried crisp and crumbled 1 cup chopped onion 2 cups cubed, peeled potatoes 1 cup water 1 can cream of chicken soup 1 3/4 cup milk 1 (4 oz) container sour cream 1/2 tsp salt Pepper 1 (8 oz) pkg shredded Cheddar cheese In bacon grease, saute onions for 2-3 minutes. Drain. Place onions, potatoes, and water in a large pot. Bring to a boil. Cover and simmer about 15 minutes. Stir in soup, sour cream and crumbled bacon. Add milk, salt and pepper and 1/2 of the cheese. Heat to serving temperature without boiling. Sprinkle remaining cheese on individual serving bowls. Added the bacon as a topping instead of stirring it in.

Definitely baked beans for me. I love the combination of BBQ, baked beans and cole slaw, yum. I'm not a cheese fan, so neither of the others appeal to me, although some kind of creamed or scalloped corn would also be good. In my family, though, everyone loves the cheese potatoes, regardless of whether they are my homemade-from-scratch au gratin or the frozen hashbrown/soup/cheese mixture, they love 'em all. Annie

Scissors, I have done mine in the crock pot.

2# bag shredded hashbrowns- thawed
1 pt. sour cream
2 cans cream of potato soup
1/4 c. dried onion flakes
2 c. shredded cheddar cheese

sprinkle top with paprika.

They don't brown like when they are done in the oven, but worked fine. I put them in on low for about 8 hours. 5 hours on high should also work. Mine aren't very "wet" even when done in the oven, so I don't understand why you would need extra liquid on hand.
