Question for the BreadMakers

I make Honey Whole Wheat bread regularly; 2 loaves per week. It calls for 2 pkg yeast (4 1/2 tsp) for 6 cups flour.

I came across a recipe today that calls for 7 1/2 cups white flour with 2 1/4 tsp yeast. It also had far too much salt...4 1/2 tsp!!

Do you think 2 1/4 tsp yeast is enough for that much flour?

Some members at the cooking forum said that's normal, that I'm using too much yeast in the honey whole wheat.

Less yeast is fine it will rise slower, and I know you can even let the dough rise in the frig overnight.

The bread recipe I saw today says it will rise in about an hour. It was a tall sandwich type loaf. The picture looked gorgeous, and it was made in 2 9x5 loaf pans.

What are your thoughts? What is the yeast to flour ratio you use in your recipes?
