Recipes for Christmas II - Week 1 December 2013

Because of the brouhaha on the original thread, I am starting a new one. Please keep any snide, snippy comments to ourselves, please. There is no reason to make nasty, ridiculing comments about peoples' tastes in foodstuffs. Differences are what make our wonderful world so very, very interesting.

Cranberry Fruit Bread

The best Christmas Bread (at least my family thinks so.) gazania@gardenweb

12 oz fresh or frozen cranberries cut in halt
2 cups pecan halves
1 cup chopped mixed candied fruit
1 cup chopped dates
1 cup golden raisins
1 tablespoon grated orange peel
4 cups flour, divided
2 cups sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/4 t salt
2 eggs
1 cup orange juice
1/4 cup melted Crisco
1/4 cup warm water

Combine cranberries, pecans, fruit, dates, raisins, and orange peel with 1/4 cup flour. Set aside.

In another bowl combine sugar, baking powder, baking soda, salt and remaining 3 3/4 cups of flour. Set aside.

In large mixing bowl, beat eggs. Add orange juice, melted Crisco and water and mix well. Add flour mixture and stir just until combined. Fold in cranberry mixture.

Spoon into 3 greased and wax paper lined 8 1/2 X 4 1/2 X 2 1/2 loaf pans. Bake at 350 degrees for 60 to 65 minutes or bake in 7 mini loaf pans for 45 minutes. Test with toothpick
