We are having what I call Mexican potatoes. It's really just a taco but instead of serving it in a taco shell, I put the meat mixture and all the trimmings on top of a baked potato, put it under the broiler and let the cheese melt all over. YUM.

I bought one of those fully cooked pot roasts w/gravy, by Tyson. It's just the meat, then I cooked some potatoes & carrots in the oven and put the roast in the crock pot for about 2 hours. I poured in the cooked veggies and.... boy was it good! It was well worth the money to buy this rather then cook from scratch. They are less then $5.00 It will feed me 2-3 times.

I pounded some pork chops kind of thin (I couldn't flatten them into cutlets), floured and browned them. Made a sauce with lemon juice and chicken broth, capers and garlic.

Whole wheat pasta with garlic, olives, tomatoes green peppers and onions.

And.....apple cobbler in the oven!

Oh my, those Mexican potatoes sound wonderful! Those scalloped potatoes sound good, too...haven't had those for awhile!

My meatloaf is in the oven, getting potatoes and carmalized ontions ready to also go in to finish cooking and I'm simmering baby carrots on the stove top. Sorta a comfort food meal, I suppose!

Strange table fellows here.....clam stuffed mushrooms and potato soup. Just got hungry for both and decided to indulge myself.

Scalloped potatoes and ham and green beans.

Lamb shanks with mashed potatoes and corn. The shanks are pre-cooked (bought from Costco) but they are wonderful. Lots of rosemary and a flavorful jus that's just right on the taters.

Mmmmmmmm!

Tomarrow is my grocery shopping day so as you might imagine it was sort of slim picking here tonight.

In rooting around in the freezer I found a large bag of Alaskan Pollock Fillets. Generally I bake fish, but tonight I got the silly idea to try an unusual batter. I thawed the fillets in a pan of water, then towel dried them. I then mixed a couple cups of flour with salt and black pepper and lightly floured the fillets.

I then mixed up a thin batter using 1 cup of pancake mix, 1 cup of water and three tablespoons of creole seasoning and I dipped the fillets and deep fried them...

When the fish were done I put them on a tray in the oven to stay hot while I made a huge mess of home made french fries..and voila's, we had fish & chips.... and I have to tell you, this is one experiment that will get moved to the head of the list, it worked out great.
