My cookies came out great!

This fall, I bought a French rolling pin and a very large shiny, heavy baking sheet at our restaurant supply store. They had a large sale.

My other baking sheets are the darker, non-stick type. (Wilton, etc).

I put parchment on the sheet (so it stays looking nice and new) and my cookies came out great. So often they would be too dark on the bottom, and the parchment would be browned and crispy. I often doubled the baking sheets.

My parchment is still nice and clean, not darkened and can definitely be re-used.

What a difference having the shiny, good quality baking sheet!
