i screwed up the cookies,,,and they are great!!

Its the end of the month so money is tight, got another 10" of snow overnight and I am already suffering a severe case of cabin fever. Add to that, my sweet tooth has been giving me fits for a week and I am out of snacks, what to do? I asked my wife for a suggestion but she said until my pension check comes in on the 3rd I am out of luck.

Baloney,,I decided I just needed to root around in the kitchen and see what I could come up with. I finally ran across a simple "Vanishing Oatmeal Cookie" recipe on the back of the Quaker Oats Box, and it looked simple enough:

1/2 lb butter or margarine (softened to room temp)

1 cup firmly packed brown sugar

1/2 cup granulated sugar

2 eggs

1 tsp vanilla

1-1/2 cups all purpose flour

1 tsp Baking Soda

1tsp cinnamon (i left the cinamon out)

1/2tsp salt (optional)

3 cups Quaker Oats

1 cup of raisins ( I used 2 cups)

Method

1. heat oven to 350degF

2. Combine butter and sugars and mix well

3. add eggs & vanilla , mix well

4. combine flour, baking sode, cinamon & salt-mix well

5. stir in oats & raisins, mix well

Now here is were I screwed up!! Not only did I add two cups of raisins instead of the one the recipe called for, I also opened an 20oz can of crushed pineapple, drained it thoroughly and put about 2/3 of the can in my mix, then mixed thoroughly.

Spooned the cookies out on greased cookie sheets and backed 12 minutes @ 350degF

According to the recipe it should yeild about 4 dozen, but I like man sized cookies so I ended up with about 3 dozen.

Wife says,,"Who ever heard of pineapple in oatmeal cookies?"

I said, "If you don't like em, don't eat em"

I made those about 5pm yesterday. Now this morning wife is mad at me again...she says,"You and your damn pineapple oatmeal cookies, I can't stay out of them and my sugar if off the chart this morning...LOL"
