This is not the sausage and eggs casserole you are looking for but this one I've served for several holiday breakfast and it is well liked. Plus you can put together the night before and sit on the counter the next morning a bit before putting in the oven to bake.

Eggs Benedict casserole

6 English muffins
10-12 ounces Canadian bacon (2 packages, or use diced ham) I used ham cubes
8 large eggs
2 cups reduced-fat milk (or whole milk) or I used fat free
1 teaspoon onion powder
cooking spray
1/2 teaspoon paprika
easy hollandaise sauce- (I just use Knor pkg mix)

Cut muffins into 1/2-inch cubes. Set aside.
Cut Canadian bacon into 1/2-inch squares. Set aside.
Whisk the eggs well in a 2-quart bowl. Whisk in milk and onion powder.
Spray a 9-by-13-inch glass or ceramic baking dish with cooking oil spray. Scatter half the Canadian bacon evenly in bottom of dish. Scatter muffin cubes on top of Canadian bacon. Top with the remaining Canadian bacon, scattering it evenly over the bread. Pour egg mixture over the casserole. Cover the dish with plastic wrap and refrigerate overnight, or at least 8 hours, to let bread absorb egg mixture.
Preheat oven to 375 degrees F. Remove casserole from refrigerator and uncover it. Lightly sprinkle the paprika evenly over the top. Cover the casserole with foil and bake for 40 minutes. Remove dish from the oven, remove foil, return dish to the oven and continue to bake, uncovered, until the eggs are set and the bacon on top begins to crisp, about 20 minutes more. Remove the casserole from oven and let it stand 5 minutes before serving.
To serve, cut casserole into squares and place them on plates. Spoon about 2 tablespoons (or to taste) warm Hollandaise Sauce over each serving just before serving.
Makes 10 servings.

Dorothy's Real Apple Pancakes:

2 green apples, peeled, cored & chopped
4 T butter

3 eggs
1/2 cup milk
1/2 cup flour

1/8 lb. butter
1/4 cup sugar mixed with one teaspoon cinnamon

Saute apples in first butter til soft.

Mix eggs, milk & flour together. Pour egg mixture over apples and bake at 450 degrees till it puffs up & is brown around the edges...about 10 to 12 minutes.

Melt the second butter & pour over baked pancake, sprinkle cinnamon/mixture over all, & return to the oven for another five minutes. Serve hot.

Since pork & apples go well together, suggest broiling or frying a couple pork sausages, slice up when browned & add to the pancake mixture in the first step.

10 slices white bread, remove crust and cut into pieces
1 1/2 lbs. sausage, cooked and cut into pieces
2 1/2 cups milk
1 tsp. salt
1 can cream of mushroom soup
1/2 lb. cheddar cheese, grated
6 eggs
3/4 tsp. dry mustard
1/4 lb. fresh mushrooms, sliced
Place bread pieces in greased 9x13 pan. Top with cooked pieces of sausage. Add grated cheese. In a bowl, beat the eggs, milk, mustard and salt. Pour over bread. Place sliced mushrooms on top. Spread can of cream of mushroom over top. Refrigerate overnight. Bake at 300 for 1 1/2 hours.

Here's one of my favorites (no bread or meat) :

5 eggs
1/4 cup flour
1/2 tsp. baking powder
1/4 tsp. salt
1 cup grated cheese
1 cup cottage cheese
4 oz. diced green chilies

350 degrees, 35 minutes

I make the one that Lauri posted and it is fabulous! I am asked to bring it everytime I have a potluck type event to attend. My family requests it Christmas morning.

I make my Breakfast Casseroles with potatoes..I prefer my breakfast bread to be sweet,either cinnamon rolls or Woodie's Creme Brulee French Toast.

This is an extremely popular breakfast casserole. It's been around for about 30 years from the Best of Bridge Cookbook series. My aunt made this every year for breakfast, before we opened our gifts, Our family loved it.

I would make it to this day, but hubby doesn't like eggs, so it kind of negates the benefit of making it, and it's a lot, just for me :)

Christmas Morning Wife Saver (Best of Bridge cookbook)

16 slices bread, crust removed, or not, whichever you prefer
sliced ham
sliced cheese
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/2-1 teaspoon dry mustard
1/4 cup minced onion
1/4 cup green pepper, finely chopped
1 -2 teaspoon Worcestershire sauce
3 cups milk
1 dash Tabasco sauce (optional)
1/4 lb butter, melted
enough crushed corn flakes, to cover

In a 9"X 13" buttered pan, put 8 slices of bread that the crust has been removed.
Add ham layered over bread.
Lay cheese over ham.
Cover with rest of bread.

In bowl beat eggs, salt and pepper.
To egg mixture add dry mustard, onion, green pepper, worcestershire sauce, milk and Tabasco. Pour over bread, cover and let stand in fridge overnight.
In the morning cover with crushed corn flakes.
Melt 1/4 1b butter and pour over top of flakes.

Bake uncovered for 1 hour at 350 degrees F. Let sit for 10 minutes before serving.

Had to look up this recipe as I didn't have it on the computer. I've made this one many times.

Sausage and egg casserole

1 pound bulk pork sausage

8 eggs

2 1/2 cups milk

1 teaspoon salt

1 teaspoon ground mustard

6 slices white bread, cut into 1/2-inch cubes

1 cup shredded Cheddar cheese

1.Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
2.Beat eggs in a large bowl; stir in milk, salt, and mustard. Fold bread cubes, Cheddar cheese, and sausage into egg mixture. Pour into a lightly greased 7x11-inch baking dish. Cover and refrigerate for 8 hours or overnight.
3.Preheat oven to 350 degrees
Remove casserole from the refrigerator 30 minutes before baking.
4.Bake in preheated oven until a knife inserted near the center comes out clean, about 40 minutes.

mine is tried & true. I've made it many times and making it again Christmas eve morning. Its also on the KTgathering place.

Ultimate Breakfast Casserole

12 slices bacon, cooked and crumbled
4 cups cubed bread
1/2 cup butter, melted
2 cups cheese, grated
8-9 eggs
1 cups milk
1/2 cup sour cream
salt and pepper to taste
additions, to taste

1. Cook and crumble bacon; set aside. Cube bread. Grease a 9x13 pan.
   2. Cube the bread, spread on bottom of pan
   3. Melt butter (or margarine) and pour over the bread cubes in the pan.
   4. Toss with shredded cheese. ( I used a Mexican Fiesta blend)
   5. Whisk eggs, milk, and sour cream.
   6. Pour mixture evenly over bread cubes and cheese.
   7. Sprinkle bacon (or whatever) over the top of the casserole.
   8. Cover with foil. You can cook this right away, or let it sit in the fridge overnight.
   Bake at 325-degrees, covered, for 45 minutes.
   Remove cover and bake another 15 minutes.

I forgot to mention..........
I make a hash brown casserole to go with it, and this year I am making some cherry cheesecake breakfast bundles also.

I make the one like Glenda's but I use bacon instead of sausage and instead of white bread I use store bought croissants or French baguettes cut up....enough to cover bottom of 9X13 dish.

Here's my T&T Breakfast Casserole. You can substitute bread but I like the texture and flavor of the croutons. We will be having this and hashbrown casserole Christmas morning.

Breakfast Casserole
1 package croutons (any flavor)
1 lb pork sausage (whole ham sausage is best)
1 cup shredded cheddar cheese
6 eggs
2 cups milk
1 tsp dry mustard
1/2 teaspoon salt
Dash of pepper

Place croutons in greased 3 quart retangular baking dish. Cook sausage in a skillet until brown. Drain fat. Spoon over croutons. Sprinkle with cheese.

Beat together eggs, milk, mustard, salt & pepper. Pour over mixture in baking dish. Bake in a 350ð oven 30 - 35 minutes or until a knife inserted in center comes out clean. (or assemble the night before & refrigerate, covered. Uncover to bake.) Yield: 8 servings.

Here is my super easy no-fail Breakfast Quiche recipe; it makes two quiches and everyone seems to love it.

Breakfast Quiche

2 unbaked deep dish pie shells
1 pkg mild Jimmy Dean pork sausage
1 pkg hot Jimmy Dean pork sausage
2 C shredded cheddar cheese
16 oz sour cream
4-5 t Coleman's dry mustard
10 eggs

Cook both pkgs of sausage together and drain. While sausage is cooling mix the dry mustard in the sour cream in a large bowl. Add the cheese and eggs mixing well. Finally add the cooled sausage and put equal amounts in each pie shell. Bake at 375 for 45 minutes or until firm and set.

You can make this a day ahead and refrigerate until ready to bake.
