One thing I love to bring is two different kinds of deviled eggs. One of them is usually made with smoked oysters. They always get eaten quickly.

I would take crookpot of chilli, stew or soup.

How about the good old green bean casserole or the corn casserole using the corn muffin mix? Both are simple to make & travel well.

We're having fried chicken one on Friday. We're celebrating finally getting a new manager after being without for nearly a year. We all pitched in for the chicken and I'm taking mashed potatoes and gravy from Lee's chicken.

We had one on Thanksgiving and everyone else brought the usual stuff, I brought seafood crepes and Christmas cookies. If the basic food is sandwiches, then chips, macaroni or potato salad, baked beans, cole slaw, or some type of dessert.

Shrimp Cocktail is always a big hit! Easy too--LOL

I should mention....this is for about 40+ guys!! They would LOVE to see Dean come with shrimp cocktail! LOL

It doesn't have to feed everyone, but something that would go a long way.

Do you know what type of hot sandwiches? I was thinking about carmelized onions and/or peppers in a crockpot....or roasted veggies. They are all great added to a sandwich. You can even eat them at room temp in case you have no way to keep it hot.

Baked beans was another great suggestion from kathsgrdn.

I usually send Chocolate Delight dessert with DH and he says people get a piece with their main meal cause they know it's going to be gone in a flash. Dson needs a dish for a potluck at his work and he asked me to make Choc. Delight too.

I know you've got the recipe. It's the one with the butter, flour, pecan crust. Then you mix cream cheese, powdered sugar and Cool Whip together and smear that on the cooled crust. On top of that you put a mix of chocolate pudding w/a vanilla pudding and make that according to pkg. using a little less of the milk. Frost the top with Cool Whip and I garnish with finely chopped pecans and chocolate curls from a Hershey bar. It's always a big hit and it'd be way cheaper than shrimp cocktail for 40!

How about a Peanut Butter Pie? I bet you don't see those too much up in Iowa! I like to make it in those little individual graham cracker crusts, I'd make at least 12, maybe 24, for a party that big.

Or one of those veggie pizzas- a cooked crust covered with cream cheese/ranch dip, shredded cheese and lots of raw veggies. It's a great, colorful treat that is fairly healthy and looks like guy food 'cause it's pizza, after all! Just cold, chock-full of veggies!

We go to alot of pot lucks. When Mike worked we were always required to bring chili Relleno casserole. This can be put together the day before and then add the eggs, flour and milk when you are planning on cooking it.

Chili Relleno Casserole

1 large onion chopped (Cook together until brown and drain)
4 cups grated sharp cheddar cheese
6 small cans green chilies, cut open and seeds removed
2 pounds ground beef
1 ¼ cups milk
¼ cup flour
4 eggs ( mix together in bowl)

In 9x13 pan layer half the meat mixture, half the chilies, half the cheese and then repeat again
ending with cheese. Pour egg mixture over all and bake at 350 degrees for 1 hour.
You can also put this together the night before. Just remember not to put the milk and egg
mixture in it. The next day you add the milk and egg mixture and bake.

If they like stuff that is more spicy you can use chopped green chilies as it is the seeds that make it hot.

I'd probably send a dessert, Texas Sheet cake or cookies, something 'walkaway'. Or I would do a nacho dip in a crock pot and chips.

Send your buffalo chicken dip! Guys go nuts for that!

I am a big fan of potato or macaroni salad with sandwiches. I like pasta salads as well, although I find women are more fussy for pasta salad than men are. If it were me, I would make a nice big potato salad. If they are more meat and potatoes guys, maybe a version with potato, egg, and bacon?

The last time I made something for DH to bring I had to make it ahead because I was going to be away. I made a texas sheet cake, although we would call them "pan brownies". They make a nice big batch as they are cooked in a jelly roll pan. Well, they didn't turn out so hot. Dry and tasteless and they were NOT overbaked. I told DH to run to Costo and get a sheet cake or something.

Of course, once I left he decided to bring those darn things anyway LOL. And you know what? Not only did they get devoured, but people took seconds (so it wasn't like everybody took them then threw them away or anything). I was aghast he would bring those awful things. He told me the secret: If it is sweet and it is chocolate, guys will eat it ROFLMAO! I was doubly upset because somebody stole my jelly roll pan. It had been expensive and it took me years of coveting it before I splurged on it.

For DH's potlucks I have sent my crock pot so many times!

I've sent chili, pulled pork,creamy chicken and rice, spanish rice and even spaghetti and meatballs ( with elbow macaroni).
I've also sent taco salad and that breakfast casserole. He never wants me to send any type of salad or desert because he says the single guys always bring that. Those guys have more potlucks than anyone! Kathy

Corn and Noodles is an easy thing - and everyone loves it. It is so "Iowa", LOL!

Corn & Noodles
1 quart bag frozen sweet corn (or a can of regular corn or commercial frozen sweet corn)
1 can Cream Corn
1 Egg, beaten
1 Smaller bag noodles, cooked You can add more noodles to feed more people.
Velveeta - to taste*

Mix sweet corn, cream corn, egg, and cubed Velvetta. Stir in cooked noodles.

Pour into a greased dish. I use my removable crock pot. Bake at 350º for 45 minutes. Take off the lid for the last 16 minutes if you want - to crisp up the top noodles.

If I am taking it as a pot luck, I like using my crock pot. I can put the crock back in the electric part, and put it on low to keep it hot if they don't eat right away.

*I like it cheesy - if I am making a big dish of it, I use about a cup of Velvetta.

Stir it after it has been in the oven about a half hour to mix in the cheese.

If you're sending your crock pot,mark the lid as well as the crock pot,so you get your own back.The last one i went to,i got the wrong pot lid,but since i was one of the last to leave,i didn't notice it til it was too late.

We're having one at work on the 13th. I'm taking a crock pot full of sweet & sour meatballs. Another gal is bringing a potatoe dish with bacon and onion. Buffalo chicken wing dip, veggies and dip and another is bringing fresh baked bread. Then one of the guys is baking brownies for after.
Just roll me home!!!

How about pulled pork bbq quesadelliaS?

Had one for lunch and it was really good.

But I would not mix the pork with the sauce, but serve it on the side for dipping. They had cheese with the pork as well.

I make a large baking pan of Mexican spaghetti. It uses a pound of regular spaghetti, cheese, hamburger, and salsa and feeds a lot. A crock pot of pulled pork with rolls for making sandwiches would be nice too.

Sandy, have you made a decision yet? I'm curious, because I have one to go to, too.

This is what I take for potlucks and I also take it for Christmas dinner with my family! It's the most asked for thing that I make! I'm glad I caught the Oprah show the day that Patty LaBelle was on!
Patty LaBelle's Over The Rainbow Mac and Cheese
INGREDIENTS
1 tablespoon vegetable oil
1 pound elbow macaroni
8 tablespoons (1 stick) plus 1 tablespoon butter
1/2 cup (2 ounces) shredded Muenster cheese
1/2 cup (2 ounces) shredded mild Cheddar cheese
1/2 cup (2 ounces) shredded sharp Cheddar cheese
1/2 cup (2 ounces) shredded Monterey Jack
2 cups half-and-half
1 cup (8 ounces) Velveeta, cut into small cubes
2 large eggs, lightly beaten
1/4 teaspoon seasoned salt
1/8 teaspoon freshly ground black pepper

Preheat the oven to 350 degrees F. Lightly butter a deep 2 1/2-quart casserole.

Bring the large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes. Do not overcook. Drain well. Return to the cooking pot.

In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining one tablespoon of butter.

Bake until it's bubbling around the edges, about 35 minutes. Serve hot.

marry--I'm made Patti LaBelle's mac and cheese. Boy was it rich! Good, but it sure has a ton of cheese in it.

Sandy, how about a big crockpot (or two) of nice warm soup to go with their sandwiches? A homemade beef vegetable would sure taste good or, if you're interested, I have a great recipe for a potato chowder. It's thick and creamy. I'm just thinking about the cold weather you've been having--stay warm!!

Well......as exciting as it is. Dean wants to bring baked beans with pork in them...in the crockpot. Pretty SIMPLE! lol I am sure I/he will come up with something else also.

I am sure going to keep some of these others in mind for the ones that are still to come!!!
