I have been asked to bring a cheesy potato or hashbrown dish to an event this Wed night. Does anyone have an easy but good recipe for me? Thank you so much!

You will love this one, easy to make and so yummy...

32 oz. frozen hashbrowns (not the shredded one, the cubes) -let them sit out and defost...
2 cups shredded cheddar
1 cup sour cream
1 can cream of chicken soup
1/2 tsp salt
1/4 tsp. pepper
1/2 cup chopped onion
1/2 cup melted butter (for topping)

Mix everything together,(except the melted butter) spread into 9 X 13 buttered dish
Mix 1 1/2 cups crushed cornflakes or ritz crackers with 1/2 cup melted butter. Spread over potatoes.
Bake at 350 for 50 minutes....

For the cornflakes, you can substitute chips or most any kind of cracker....

I'm asked to bring this to every covered dish or gathering we go to.....Enjoy

Been making the one posted above for years. It makes a lot. Sometimes I divide into two dishes, freeze one for later.

I always make it the nite before then bake the next day.

The trick with smooth butter cream is to beat it for a long time. Here's one of my favorite. It is so smooth and velvety it almost melts in your mouth. BUTTERCREAM FROSTING Cream l/2 cup butter with l/2 cup shortening Cream till very soft. Slowly add 1 cup granulated sugar and beat 10 minutes. Heat a small can of evaporated milk (one of those tiny 5 l/2 oz. cans) till luke warm (not hot) and slowly beat into sugar and butter mixture. Add 1 tsp. vanilla and beat for 5 more minutes. One amazing way to use this recipe is to frost a devilsfood chocolate cake with it, chill it in the fridge or freezer, and top it with this wonderful chocolate frosting (chocolate devilsfood butter cream cake). Here's the chocolate frosting: In top of double boiler melt 3/4 cup shortening and 3 double squares of baking chocolate (6 oz). Keep this warm. Meanwhile, heat l/4 cup plus 1 Tbsp. milk. Add the hot milk to one box of powdered sugar, along with one tsp. vanilla. (I beat it in a stand mixer) When milk/sugar mixture is smooth, add warm chocolate/shortening mixture. Beat only until it is thoroughly mixed so it doesn't cool too much. Pour this over the chilled buttercream frosted cake. If you grew up in Detroit, this cake is a lot like (only better than) Saunder's devilsfod buttercream cake.

Hi NancyLouise, I'll tell you, I have never owned the book. My best friend's mom did. I found the recipe back in the mid 90's and not writing it down at that moment, called her the next day and wrote it on the lp jacket of one of the records of my Bruce Springsteen 3 record boxed set. The 80's to 90's collection. :) My life was chaotic with lots of toys around, and it's the first bit of paper found at the moment I needed it. It stayed folded in another recipe book for years and then was lost in a move. While I love a regular Yankee Pot Roast, ohhh there's just somethin' different about the scent of this one. The cider, the vinegar, the mushrooms. Truly, it is a tried and true, never let you down, ta-da recipe. I wrote this down again and have carefully secreted it away and have made copies for my friends. I hope you like it. I hope you all like it. Kim

Here are a couple of my favorites. Both could be made with ground turkey or chicken. Vegetable Burger Soup makes 10-12 servings 1 lb. ground beef or pre-cooked frozen ground beef 2 lbs. can stewed or diced tomatoes 1 1 lb. can tomato sauce 4 cups water 2 10 oz. pkgs mixed frozen vegetables (carrots, peas, corn, green beans) 1 envelope dry onion soup 2 t. sugar - white or brown Brown beef and drain off fat if using fresh. Thaw beef if using frozen precooked. Add rest of ingredients to soup pot or slow cooker. Bring to a boil, lower heat and simmer one hour if in pot on stove. Cook on low for 8 hours if in crock pot. I add diced cooked potato cubes to this after thawing the soup and before heating. Sometimes cooked potatoes become soft with freezing. You can use diced fresh onion if the onion soup is too salty. Taco Soup I used less meat and it was great; subbed some bulk sausage for some of the ground beef. I did not include the can of hominy. You could use no salt versions of the tomatoes and tomato sauce. Not sure what you could sub for the Ranch Dressing or taco mix. Maybe garlic and parsley for the Ranch and chili powder for the taco? 2 pounds ground round 1 large onion, diced 1 packet taco seasoning 1 packet Hidden Valley Ranch original dry mix salad dressing 1 can kidney beans (with liquid) 1 can pinto beans with jalapeños (with liquid) 1 can yellow hominy 1 can diced tomatoes and green chilies (Rotel) 2 cans stewed tomatoes (I use Mexican stewed tomatoes) 1 8 oz. can tomato sauce 1 cup of water Cook beef and onion until beef is browned, drain excess grease. Add the remaining ingredients. Bring to a boil then reduce heat and simmer for 30 to 45 minutes.

LOL! Thanks, Annie... but, of course I discussed with my sister-- she doesn't care what I bring or whether it is an app, a dessert or a side. I told her I'd stay away from the core meal since she had that covered (though was still working through the details when we discussed last weekend). Sorry, I didn't think it was necessary to provide the discussion behind the OP... I certainly didn't mean to make it harder for you to share suggestions. Just to be clear -- I am leaning towards a rustic dessert or an easy handheld snacky item. It isn't a potluck ... it is a housewarming. Middle sister will feed her guests but I have offered to bring something. She doesn't care what (isn't the control freak that I am -- or that my youngest sister is) I will let her know what I plan when I land there. A few thoughts on all the great recommendations. I have never had or seen the golden graham bars -- i am sure the kids would love them but do they look like stoner munchie food or what?? (ahem, i mean, not that i would know!!) Yup-- cookies, magic bars, brownies etc are all crowd pleasers-- but here's the thing. I don't like making them. I should-- I used to-- but for a variety of reasons, I don't anymore. I have passed all my great cookie+ recipes onto the nieces and nephews for them to pick up. I appreciate the suggestions and have saved links but after soul searching this am, i have decided that I am not going to make something I don't enjoy making. I may purchase but I won't make. It is going to be in the 60s -- so no summery dishes. We'll be celebrating fall with fall flavors and activities. They are further north and at higher elevations-- leaves have already started to turn. Still considering ... hand pies, apple cake of some sort, cupcakes or something savory in dough or puff pastry. Bbstx I love the idea of a cider treat! Again-- thank you all! Love the variety of ideas and recipes!

I make the recipe too. Very yummy! But, I will warn you NOT to use the reduced fat soup. Sent DS to the store for some for the recipe, he brought back the reduced fat and UGH! Just not the same.
I sprinkle crushed potato chips on top before baking.

Last weekend I wanted some type of a casserole or hotdish but not sure what I wanted. Been meaning to try a hashbrown casserole that so many talk about. Well I didn't have the exact ingredients so I did a little experimenting. I had the shredded hashbrowns and some say to use them anyway so that's what I used. I used cream of potato soup, Mexican mix cheese, didn't have any sour cream but wanted more moisture in there and thought about some veggies so I thought why not use a can of cream corn? I have some I bought by mistake and want to use it up so I thought it would/should work ok. Didn't think about it or I'd have tried some Ranch dressing. No fresh onion, but dry minced is in the pantry, some garlic powder, Italian seasoning, lemon pepper and I mixed that together. Thought it should work. But I wanted some meat with it. So I pulled out some frozen meatballs and scattered in the bottom of the pan, topped it with the mixture and baked it covered, then pulled the top at the end and let it go a bit, then in the last minutes topped with some more cheese. Didn't have anything crunchy for the top and I'm usually not much on those toppings anyway. It filled a 9x9 pan nicely. Well the end product was very good. I had two or three meals out of it, then the rest I used as a base for another dish. I mixed it with a tube of cooked hot sausage, more hashbrowns, a can of whole kernel corn and seasonings. Real good. Served it with biscuits.

I'm going to give this version a try too when I get all the ingredients. These days I need easier to cook type things. I can't stand over the stove like I used to be able to so these are great.

When I make this recipe, I top it with crushed Chez-it crackers.

We have been enjoying this for years.

It does up great in the oven or crockpot. In the crock pot you add the topping just before serving.
